Job Description

Fini Pizza is looking for an experienced Production Lead to lead day-to-day operations at our central commissary and keep our multiple store locations stocked with consistent, high-quality dough, tomato sauce and a few other prepared foods. This is a hands-on leadership role for someone who feels comfortable with kitchen production, purchasing and communicating with teams across locations. About the Role The Production Lead owns the commissary's daily production schedule, quality control, and delivery coordination, while also spending time on the road at our store locations to make sure product is arriving fresh, correctly, and on time. You'll supervise a production team, manage inventory and ordering for core ingredients, and act as the connective tissue between the commissary and every store you supply. Responsibilities
  • Plan and run daily production schedules for pizza dough, tomato sauce, and other prepared foods to meet each location's forecasted volume.
  • Supervise, and schedule commissary production staff; assign tasks and cover shifts as needed.
  • Monitor product quality and consistency at every stage for each prepared item— mixing, proofing, cooking, packaging — and correct issues before product ships.
  • Coordinate deliveries and transfers between the commissary and store locations, adjusting routes and timing as order volume changes throughout the seasons.
  • Keep inventory of commissary items, place orders with suppliers, and manage stock levels to avoid shortages or waste.
  • Enforce food safety and sanitation standards across the commissary, including proper labeling, dating and storage.
  • Ability to effectively communicate with teams in different locations to confirm weekly needs accuracy and any product issues should it be needed.
  • Maintain a log of outgoing commissary items and record costs weekly. Qualifications
  • 2+ years of experience preferred in food production, commissary operations, or commercial kitchen management, ideally in pizza, bakery, or a similar environment.
  • 2+ years of experience in purchasing and overseeing inventory for a food production operation.
  • Prior experience supervising a production or kitchen team, including scheduling and training staff.
  • Working knowledge of dough production and prepared-food batch cooking preferred.
  • Familiarity with food safety practices; ServSafe Manager certification (or ability to obtain one within 60 days of hire).
  • WIllingness to work in different locations as it pertains to those commissary team members.
  • Comfortable with early-morning start times and a schedule that shifts based on production needs.
  • Strong communication skills — this role is the daily link between the commissary, delivery drivers, and every store it supplies
  • Physically able to lift up to 50 lbs repeatedly.
  • Bilingual (English/Spanish) a plus. Employment Details

  • Primary base: the commissary, with regular travel to store locations for deliveries and quality checks.
