Job Description

About the Role Masa is seeking a highly organized, detail-oriented, and dependable receiver to join our team. The Receiver plays an essential role in maintaining the quality and consistency of our operation. This position is responsible for receiving and inspecting daily deliveries, with particular attention to the quality, freshness, handling, and accuracy of premium ingredients and specialty products. The ideal candidate has experience in a high-end restaurant environment and a strong appreciation for Japanese cuisine. Familiarity with Japanese ingredients, seafood, produce, sake, and specialty products is strongly preferred. The Ideal Candidate The ideal candidate understands that receiving is the first point of quality control for a fine-dining restaurant. They take pride in knowing the products they receive, recognizing quality, maintaining precise records, and ensuring every ingredient is handled with the care it deserves. Responsibilities Receive all daily food, beverage, and operational deliveries with a high level of accuracy and attention to detail. Inspect products upon arrival for quality, freshness, condition, temperature, quantity, and specification. Verify deliveries against purchase orders and invoices, identifying discrepancies, substitutions, shortages, or damaged product. Apply particular attention to premium seafood, specialty Japanese ingredients, seasonal products, and other high-value items. Ensure products are properly handled, labeled, stored, and rotated immediately upon receipt. Maintain appropriate storage standards and FIFO procedures throughout all storage areas. Communicate product quality or delivery concerns promptly to the Chef & Kitchen Management team. Maintain professional and productive relationships with vendors and delivery personnel. Assist with inventory counts and maintain accurate receiving documentation. Maintain clean, organized, and sanitary storage areas. Coordinate deliveries in a manner that supports the restaurant's service standards and minimizes disruption to daily operations. Follow all food safety, sanitation, health department, and company standards. Assist with additional operational responsibilities as needed. Qualifications Valid New York City Food Protection Certificate (Food Handler's Card) required. Previous receiving, inventory, purchasing, or back-of-house experience in a fine-dining restaurant strongly preferred. Familiarity with Japanese cuisine and ingredients strongly preferred. Knowledge of premium seafood and proper seafood handling is highly valued. Strong attention to detail and ability to recognize product quality and inconsistencies. Ability to accurately review invoices and product specifications. Strong time-management skills. Professional communication skills and the ability to maintain positive vendor relationships. Ability to work independently while collaborating closely with culinary management. Ability to work efficiently in a fast-paced, high-expectation environment. Dependable, punctual, and accountable with a strong sense of ownership. Ability to lift 50 lbs and move deliveries as required.
