Responsibilities:

• The team member must grab the top butt and separate the top butt from the butt bone following the natural curvature of the butt bone, by pulling the butt bone and the top butt apart with the weight of their forearm and small incremental cuts.
• The bone will get thrown onto the bone line.
• Separate the top butt and the bottom butt, as close to the natural seam as possible.
• Once the separation is complete, the product is thrown onto the conveyor line for further processing.
• Must sharpen the knife and sterilize the knife and hook every 1-3 pieces.

There are different styles of cuts in this position that would require additional steps. Depends on the make.

Qualifications:

• Must possess the will to learn and handle large pieces of product
• A certain level of physical fitness
• Knife experience is preferred
• Ability to work 50+ hours
