Operations Manager Who We Are Located in Downtown Palisade, Peach Street Distillers is the first Distillery in Colorado and is the original grain-to-glass Distillery using local produce in all of our 30+ spirits. Position Summary The Trolley Supervisor is responsible for leading the day-to-day operation of the Peach Street food trolley (similar to a food truck), including the team, food preparation, scheduling, menu execution, administrative responsibilities, and financial performance. This Trolley supports our Tasting Room and Distillery. This is a hands-on leadership position. The Supervisor's time will be split between administrative/office responsibilities and working directly in the trolley as a line cook and leader alongside the team. The Trolley Supervisor will report to and work closely with the Operations Manager to create a consistent, efficient, profitable, and positive food operation that reflects "The Peach Street Way". Key ResponsibilitiesTeam Leadership & Daily Operations- Lead daily Trolley operations and ensure the team is prepared for service.
- Supervise, coach, train, and support Trolley employees.
- Set clear expectations for quality, cleanliness, organization, teamwork, and guest experience.
- Work scheduled line cook shifts alongside the team.
- Help solve operational problems quickly and communicate needs to the Operations Manager.

- Build and maintain the weekly Trolley employee schedule.
- Schedule appropriately based on anticipated business levels, events, and labor needs.
- Assist with employee training, development, performance feedback, and accountability.
- Communicate staffing concerns and hiring needs to the Operations Manager. Prep & Production Management
- Develop and maintain daily and weekly prep lists.
- Establish and maintain appropriate par levels.
- Ensure food is properly prepared, labeled, stored, rotated, and ready for service.
- Monitor production levels to minimize shortages and unnecessary waste.
- Coordinate prep priorities with the Trolley Assistant and Trolley team. Menu Development
- Collaborate with the Operations Manager on menu development.
- Develop and execute rotating specials and seasonal offerings.
- Help ensure menu items can be executed consistently and efficiently.
- Consider ingredient availability, production requirements, guest demand, and profitability when developing menu items. Food Cost & Financial Management
- Monitor food cost and identify opportunities to improve profitability.
- Track waste, portioning, pricing, and product usage.
- Work with the Trolley Assistant to maintain appropriate inventory levels.
- Review purchasing and usage trends.
- Recommend pricing or menu changes when necessary to protect margins. Invoices & Administration
- Enter, review, and manage food-related invoices in Peach Street's software systems.
- Maintain accurate records related to purchases and food costs.
- Work with the Operations Manager to resolve invoice, vendor, or cost discrepancies.
- Complete assigned administrative responsibilities accurately and on time. Food Safety & Cleanliness
- Ensure compliance with Peach Street food safety and sanitation standards.
- Maintain a clean, organized, and safe kitchen and Trolley workspace.
- Ensure employees follow proper food handling, storage, cleaning, and sanitation procedures.
Qualifications The ideal candidate:
- Has professional kitchen and line cooking experience.
- Has previous leadership, shift lead, sous chef, kitchen manager, or supervisory experience.
- Is organized and comfortable balancing administrative work with hands-on kitchen responsibilities.
- Understands food cost, portion control, inventory, prep planning, and kitchen organization.
- Understands integration of locally sourced products and our spirits.
- Can build schedules and manage competing priorities.
- Communicates clearly and professionally.
- Leads by example and is willing to jump in wherever needed.
- Works well collaboratively with the Operations Manager and broader Peach Street leadership team.
