The Role The Alfalfa Kitchen Manager is the heartbeat of the back of house. This role exists at the intersection of craft and leadership, responsible not just for running a great kitchen, but for building one. You own the people, the product, and the performance that make Alfalfa's food what it is: ingredient driven, scratch-made, and delivered with care on every ticket. As a leader, you hold full accountability for prime cost, labor and cost of goods, alongside food quality, recipe adherence, prep execution, yield, and compliance with food safety standards. You build and follow the systems, develop your team, and protect the integrity of our food and culture on every shift. This is a role for someone who leads by presence, coaches with purpose, and takes deep pride in what comes out of the kitchen. Job Responsibilities Own and drive prime cost, manage labor and COGS against P&L targets daily, weekly, and by period; build BOH labor schedules aligned to projected volume; enforce clock-in/out and break compliance per state and local law Drive cost of goods through disciplined ordering, accurate receiving, yield management, proper portioning, and waste reduction; track and log daily waste Ensure every item leaving the kitchen meets Alfalfa's recipe, portioning, and presentation standards every shift sequence and complete all in-store and online orders accurately and in line with Alfalfa's prep time standards Ensure prep is completed daily against proper par levels based on projected volume; monitor yield on all proteins, produce, and prepared items and address variance immediately Maintain passing Ecosure audit scores and an 'A' grade on County Health Inspections; conduct regular internal self audits to identify and resolve gaps before formal audits Enforce food safety procedures across all Kitchen stations: handwashing, allergen handling, temperature monitoring, FIFO, labeling, and sanitation; ensure all logs are completed accurately every shift Recruit, onboard, train, and develop all kitchen team members; drive the Kitchen training by utilizing company resources such as, Opus and the Alfalfa CT training roles; Conduct inventories, place accurate vendor orders, receive and inspect all deliveries to Alfalfa's quality standards Coach Kitchen Supervisors and team members in real time; conduct regular performance conversations, and formal reviews partner with the GM on disciplinary action and PIPs Lead the pre-shift 'daily sprouts;' build a culture of accountability, urgency, and pride in craft fully aligned with The Alfalfa Way Schedule 40-50 hour workweek Must be available
