Job Description

Position Summary The Kitchen Manager works closely with the General Manager to lead all back-of-the-house operations and kitchen team members. This role is responsible for food quality, kitchen performance, food safety, inventory, staffing, training, and maintaining Las Palapas standards. The Kitchen Manager supports a positive team environment while helping control food and labor costs and ensuring efficient restaurant operations. What You'll Do Lead, supervise, and support all back-of-the-house employees and daily kitchen operations. Train, coach, and evaluate kitchen team members according to Las Palapas standards and procedures. Ensure kitchen employees understand their responsibilities, follow proper procedures, and provide quality work. Help maintain proper staffing levels and support scheduling needs for kitchen operations. Be knowledgeable of all kitchen positions and assist with any kitchen duties when needed. Monitor food preparation, quality, portion sizes, presentation, and consistency to ensure menu items meet Las Palapas standards. Ensure all food is prepared, stored, and handled safely according to health department requirements and food safety procedures. Maintain knowledge of food safety regulations and ensure kitchen team members follow required safety and sanitation practices. Monitor food temperatures, sanitation practices, equipment cleanliness, and other food safety requirements. Ensure kitchen areas, equipment, storage areas, and workspaces are clean, organized, and properly maintained. Oversee inventory, food supplies, kitchen supplies, and equipment needs to ensure the restaurant is properly stocked. Assist with receiving deliveries and ensure food and supplies meet quality standards. Partner with the General Manager on food cost control, inventory management, and operational efficiency. Participate in food inventory processes and monitor product usage to help reduce waste. Assist with hiring, onboarding, and training kitchen employees. Encourage teamwork by cross-training employees and developing team members across multiple kitchen positions. Support menu execution and production planning to meet guest demand. Work with the General Manager to maintain company standards for food quality, service, cleanliness, and profitability. Promote a safe work environment and ensure employees follow workplace safety guidelines. Report accidents, injuries, equipment concerns, or safety issues to the appropriate leadership team members. Follow Las Palapas standards for service, appearance, attendance, conduct, and leadership expectations. Perform all duties and responsibilities according to Las Palapas standards, training, and expectations, as well as reasonable direction from restaurant leadership. Perform other reasonable restaurant duties as assigned by a Manager or Supervisor. Required Qualifications Previous full-service restaurant kitchen leadership or supervisory experience. Preferred Qualifications Previous Kitchen Manager, Assistant Kitchen Manager, or Restaurant Management experience. Experience working in a high-volume restaurant environment. Experience with food cost management, inventory control, and labor management. Bilingual or multilingual skills are a plus. Scheduling & Availability Kitchen Managers should be available to work a variety of shifts, including mornings, evenings, weekends, holidays, and busy service periods. Schedules may vary based on the needs of each restaurant. Employees are expected to arrive on time, work their scheduled shifts, and follow Las Palapas' process for requesting time off or reporting an absence or late arrival.
