We're looking for an experienced cafe leader who combines strong operational capability with exceptional people leadership. Someone who knows how to coach and develop a team, manage labor and costs, protect product quality, maintain a great customer experience, and create the accountability required for a successful operation.

OPERATIONS

You'll set clear expectations, recognize great work, address performance issues, and develop future leaders by giving people the tools, feedback, coaching, and accountability they need to succeed.

OPERATIONS

Know your business.



You'll own the operational engine of your cafe : sales, labor, productivity, waste, inventory, purchasing, expenses, and profitability.



You'll build smart schedules, understand your P&L and KPIs, spot trends, and turn the numbers into action. You'll also help your team understand how their everyday decisions affect the health of the business.



The goal isn't simply hitting the numbers. It's building a team that knows how to consistently produce great results.

PRODUCT + CUSTOMER EXPERIENCE

Protect what we're known for.



You'll set the standard for warm, knowledgeable hospitality and exceptional food and beverage quality while bringing Grand Central Bakery's products and values to life for your team and customers.



You'll know the cafe from the inside out sandwich bar, coffee, bread, pastry, merchandising, and customer service and you'll coach your team to do the same.



And when the rush hits, you're not managing from the sidelines. You're a visible, credible operator who can step into any station and work alongside your team.

FACILITIES + SAFETY

Own your four walls.



You'll maintain a clean, safe, welcoming caf , protect health and safety standards, and ensure equipment and facility issues are addressed quickly.



You notice what needs attention and take ownership. Just as importantly, you build a leadership team that does the same.



You don't walk past problems. You develop people who know how to solve them.

PEOPLE + PERFORMANCE

How You'll LeadWe're looking for leaders who can do both. You can coach through a performance challenge, review labor, develop an emerging leader, troubleshoot an operational issue, adjust deployment, and jump onto the floor when the rush hits.



You move comfortably between people, numbers, operations, and execution while keeping sight of the bigger picture.



You communicate clearly, stay composed, solve problems, recognize great work, address issues early, and hold yourself and others accountable.



Most importantly, your team knows what's expected, how they're performing, why their work matters, and how they can grow.

What You'll BringWe're looking for leaders with:3+ years of restaurant management experience; quick-service (QSR), fast-casual, bakery-cafe , or other high-volume restaurant experience strongly preferredDemonstrated experience leading, coaching, training, and developing teamsExperience developing other leaders and building a strong bench of talentStrong understanding of restaurant labor management, scheduling, deployment, productivity, and cost controlsAbility to read and understand P&L statements and key restaurant financial metricsExperience managing inventory, waste, purchasing, cash handling, and operating expensesDemonstrated ability to identify operational problems, determine root causes, and implement solutionsHands-on experience across restaurant floor positions; customer service, barista/coffee, and food production experience strongly preferredWorking knowledge of food safety, health department, and employee safety requirementsExperience with POS, HRIS/ATS/payroll, scheduling, and other restaurant operating systems; Square experience is a plusIntermediate skills with Outlook, Excel, Word, or comparable programsA valid Food Handler's Card and commitment to maintaining all required food-safety standardsCuriosity, adaptability, sound judgment, and a drive for continuous improvementExperience with Open Book Management principles is a plus.



Schedule + The Reality of the RoleThis is a full-time, exempt leadership position, typically working five days per week.



The Cafe Manager and Assistant Cafe Manager work offset schedules to provide strong leadership coverage throughout the week. Cafe Managers generally have either Sunday/Monday or Friday/Saturday as their regular consecutive days off.



Restaurant leadership doesn't always follow a predictable script, so flexibility is required for emergencies, special projects, and unexpected business needs.



This is also a hands-on leadership position. You'll spend meaningful time on the cafe floor working alongside your team while also protecting the administrative and strategic time necessary to effectively run your business.



You need to be equally comfortable with a coaching conversation, a P&L, a schedule, and a lunch rush.
