I. ABOUT
As Restaurant Manager, you will be the primary on-the-floor leader of the Green Bay Bakehouse restaurant, responsible for ensuring each service runs smoothly, efficiently, and with exceptional hospitality. This is a highly hands-on leadership role. You will lead the FOH team during service, manage daily staffing and service flow, uphold Voyageurs hospitality standards, and work closely with the Head Chef to create strong communication between the kitchen and dining room. A key measure of success in this position is creating a restaurant that can operate consistently without requiring daily intervention from the Operations Coordinator or Owners. You will develop a confident, well-trained team, anticipate problems before they disrupt service, and take ownership of the details that create an exceptional guest experience. You will report directly to the Owners, and work closely with the Head Chef, Operations Coordinator, and department leads.
II. RESPONSIBILITIES

Daily Restaurant Leadership:
Serve as the primary manager on duty and lead FOH restaurant operations during scheduled shifts. Manage the flow of service, including servers, hosts, baristas, runners, table sections, reservations/waitlists, and guest needs. Conduct pre-service communication and ensure the team is prepared for anticipated volume, menu changes, events, and daily priorities. Troubleshoot service issues quickly and make real-time decisions to keep the restaurant operating smoothly. Ensure opening, shift-change, and closing responsibilities are completed consistently. 2.
Team Leadership & Training:
Lead, coach, and hold FOH team members accountable to Voyageurs service and performance standards. Train and develop Guest Experience Servers, Hosts, Baristas, and other FOH positions using the systems established with the Owners. Identify individual and team training needs and communicate them to the Operations Coordinator. Provide regular feedback, recognition, coaching, and corrective direction when appropriate. Support onboarding and successful integration of new FOH team members. 3.
Scheduling, Attendance & Coverage:
Manage day-to-day schedule changes, call-outs, late arrivals, and immediate coverage needs. Build an effective Green Bay FOH schedule based on forecasted sales and labor targets, and work with the Operations & Staff Coordinator to fill your gaps and publish your schedule. Maintain clear attendance accountability and escalate recurring concerns to the Operations Coordinator. Build a cross-trained team capable of providing flexible coverage without relying on Owners for staffing solutions. 4.
Guest Experience:
Set and maintain the standard for warm, attentive, knowledgeable Voyageurs hospitality. Maintain a visible presence in the dining room and regularly interact with guests. Handle guest concerns and service recovery professionally and proactively. Monitor service speed, table flow, cleanliness, food presentation, and overall restaurant atmosphere. Communicate recurring guest feedback and opportunities for improvement to leadership and Head Chef. 5.
Restaurant Standards & Organization:
Maintain an immaculate, organized, and guest-ready FOH environment. Ensure daily and scheduled cleaning responsibilities are completed and documented. Monitor FOH supplies and communicate inventory and ordering needs through established systems. Ensure cash handling, deposits, comps, discounts, team meals, waste, and other restaurant controls are followed accurately. Identify equipment or facility issues and communicate them promptly through the appropriate operational process. 6. Financial & Operational Awareness Understand daily restaurant sales and scheduled labor and make appropriate staffing decisions throughout service. Work within labor targets established by the Owners. Monitor waste, discounts, comps, and other controllable restaurant costs. Look for opportunities to improve service efficiency without compromising hospitality. Use sales trends and historical volume to improve staffing and preparation for future services. 7. Cross-Department Collaboration Work closely with the Head Chef to maintain strong FOH/BOH communication and resolve service issues collaboratively. Communicate menu changes, sold-out items, allergens, special features, and operational information clearly to the FOH team. Partner with the Operations Coordinator on training, systems, SOPs, staffing, and continuous improvement. Support special events, catering, and other Green Bay Bakehouse programming when required.
III. QUALIFICATIONS
Minimum 2+ years of serving experience , preferably in full-service dining. Previous leadership or restaurant management experience preferred. Strong hospitality instincts with a genuine focus on the guest experience. Confident leader with excellent communication and team-building skills. Organized, dependable, and able to make decisions in a fast-paced environment. Calm and solutions-focused when navigating team or guest challenges. Basic understanding of restaurant operations, including scheduling, labor, sales, and waste. Flexible availability, including weekends and peak service periods. Strong alignment with Voyageurs standards of hospitality, quality, integrity, and teamwork .
IV. SCHEDULE
: The Restaurant Manager position is a full-time role, with the weekly schedule built collaboratively based on the needs of the restaurant, company-wide coverage, and the individual's availability. As Friday, Saturday, and Sunday are key service days for the Green Bay Bakehouse, regular weekend availability is an essential expectation of this leadership position. The Restaurant Manager is expected to: Maintain regular availability on Fridays and be present for key Friday services as scheduled. Work every weekend, including at least Saturday or Sunday each week. Work both Saturday and Sunday a minimum of two weekends per month. Maintain flexibility to adjust their schedule when business needs, events, staffing, or coverage require additional leadership presence. Outside of these expectations, the weekly schedule may be structured with flexibility to create a sustainable workweek while ensuring strong management coverage during the restaurant's highest-volume periods, within a 37 - 45 hour work week.
V. COMPENSATION & BENEFITS
$48,000-$54,000 annually, based on qualifications, experience, and overall fit for the role. Quarterly Performance Bonus The Restaurant Manager is eligible for a quarterly performance bonus, providing an opportunity to earn additional compensation based on the performance of the Green Bay location and individual leadership performance. Bonus achievement will be evaluated quarterly across four key areas: Average Order Value — Growth and improvement in average guest spend. Wages-to-Revenue Ratio — Effective labor management while maintaining appropriate staffing levels and service standards. Customer Reviews — Consistent guest satisfaction and positive customer feedback. Owner Review — Overall leadership performance, accountability, team development, execution of company standards, and progress toward quarterly priorities. Each area will contribute to the overall quarterly bonus evaluation. Specific targets, measurement criteria, and bonus amounts will be established and communicated for each performance period.
