Schnitzel Haus + Champignon Haus are looking for an experienced kitchen professional to take the lead on our commissary production for the 2026 Grand Rapids Christkindl Markt. Our commissary crew prepares food for both of our Christkindl Markt chalets—from pork and chicken schnitzel on a stick to our mushroom-focused menu, including roasted champignons, tofu schnitzel and German bread dumplings with mushroom gravy. This is a hands-on Lead position—you won't be standing around with a clipboard. You'll work alongside a small production crew while keeping the day's production moving, making sure our food-safety standards are followed and helping everyone know what needs to happen next. What You'll Do
- Work alongside and lead a production crew of approximately 1-8 employees
- Follow an established daily production plan and keep the crew on pace
- Train and guide employees on our recipes, procedures and equipment
- Serve as Person in Charge (PIC) and actively monitor food-safety practices
- Oversee temperatures, cooling, sanitation, labeling and proper food storage
- Complete basic production and food-safety logs
- Open the commissary and get production rolling for the day
- Monitor product and supply levels and communicate shortages
- Follow and enforce Downtown Market and Schnitzel Haus/Champignon Haus equipment, cleaning and sanitation procedures
- Handle routine production and workflow issues—and know when it's time to call in the owner What We're Looking For
- Current ServSafe Manager certification required
- Prior commercial kitchen experience required
- Comfortable both leading people and doing the work
- Strong food-safety and sanitation knowledge
- Organized, dependable and able to keep a busy production kitchen moving
- Comfortable training and giving direction to employees with varying levels of kitchen experience
- Prior lead or supervisory experience is a plus, but isn't required
- Reliable attendance and punctuality are essential
- Able to stand for extended periods and perform repetitive kitchen work, including lifting, carrying, moving product and cleaning You don't need experience with every part of our menu or production process.
We'll train the right person on our recipes, equipment and systems. We're looking for a strong commercial-kitchen foundation, solid food-safety knowledge and someone who's comfortable taking the lead. Schedule & Pay The ideal Lead candidate is available 40 hours/week, primarily Wednesday-Sunday. However, we are open to experienced candidates seeking a part-time schedule. Shifts are generally 8 hours and fall between 8am
- 9pm Strong availability throughout the Nov. 18-Dec. 24 market season is expected. Limited pre-approved time off can be accommodated. $26
- 30/hour, based on experience. This is a non-tipped position.
