Job Description

Campbell Hall Rehabilitation Center is seeking an experienced and dedicated Food Service Director to oversee the daily operations of our Dietary/Food Service Department. The ideal candidate will be a strong leader who is committed to providing high-quality, nutritious meals and exceptional service to our residents while maintaining compliance with all federal and New York State regulations.
Responsibilities:
Direct and oversee all daily operations of the Food Service/Dietary Department. Ensure residents receive nutritious, appealing, and appropriately prepared meals according to their individual dietary needs and preferences. Supervise, schedule, train, and evaluate dietary employees. Ensure compliance with
CMS, NYS
Department of Health, and applicable food safety and sanitation regulations . Work closely with the Dietitian, Nursing Department, Administrator, and interdisciplinary team regarding resident nutritional needs. Review menus and ensure appropriate therapeutic and special diets are provided. Monitor food quality, portion control, meal temperatures, presentation, and service. Maintain proper food storage, labeling, inventory rotation, and sanitation procedures. Manage food ordering, inventory, purchasing, and department expenses while maintaining budgetary controls. Conduct regular department audits and implement corrective action when necessary. Respond appropriately to resident concerns and ensure resident satisfaction with meals and dining services. Maintain accurate dietary records and required documentation. Ensure staff follow infection control, food safety, and workplace safety procedures. Participate in surveys, inspections, QAPI initiatives, and regulatory compliance activities. Develop and maintain departmental policies and procedures. Ensure adequate staffing and efficient department operations.
Qualifications:
Previous experience as a Food Service Director/Dietary Director , preferably in a skilled nursing or long-term care facility. Knowledge of long-term care dietary regulations and food safety requirements. Strong leadership, organizational, communication, and interpersonal skills. Ability to manage staff and departmental operations effectively. Experience with menu planning, therapeutic diets, purchasing, inventory, and budgeting. ServSafe certification preferred. Certified Dietary Manager (CDM) credential preferred, as applicable. Knowledge of CMS and New York State Department of Health requirements preferred.
