Anyone can carry a plate. We are looking for the person who carries the evening. From 1995 to 2017, The Blue Star was the restaurant Colorado Springs measured other restaurants against, not because of any single dish, but because of the people who worked the floor. They knew their guests by name and by preference. They read a table before they reached it. They made a Tuesday feel like an occasion. We are bringing The Blue Star back, and the dining room is where it will be won or lost. We are hiring servers who understand that hospitality is a craft, with technique, standards, and a lifetime of refinement in it, and who want to practice it at that level. What You'll Do Greet every table with genuine warmth and set the tone for the meal Guide guests through the menu and wine list with real knowledge, recommending what fits the guest rather than the check Manage pace and coursing with the kitchen so no table waits and no table feels rushed Enter orders accurately and communicate allergens and modifications precisely Anticipate the need before it becomes a request Execute the technical standards of elevated service: marking, clearing, wine presentation, and silent coordination with your team Support the whole dining room, not just your section Follow all cash handling, POS, alcohol service, and sanitation standards without reminder What Poise Actually Means Here Every restaurant posting uses these words.
