Kitchen Officer Stone County Regional Correctional Facility is seeking a dependable and experienced Kitchen Officer to oversee daily food service operations at our correctional facility. This position is responsible for supervising kitchen staff and inmate workers, maintaining food safety and sanitation standards, ensuring meals are prepared and served on time, and helping manage inventory, production, and documentation. The ideal candidate should have experience in institutional food service, correctional food service, school food service, hospital food service, military food service, or another large-scale kitchen environment. Responsibilities The Kitchen Supervisor will be responsible for the overall on-site direction and operation of the facility food service program. Duties include, but are not limited to: Supervising daily kitchen operations, food preparation, meal service, and cleanup. Ensuring meals are prepared according to approved menus, recipes, portion sizes, and required serving times. Supervising food service employees and inmate kitchen workers. Maintaining direct supervision of inmate workers at all times. Providing orientation and instruction to inmate workers before they begin kitchen duties. Ensuring food is prepared consistently in quality, taste, texture, appearance, and portion size. Ensuring hot foods are held at 135 degrees or higher and cold foods are held at 41 degrees or lower. Recording food temperatures, weights, and portions on required daily logs. Following approved cycle menus and production schedules. Assisting with menu compliance, nutritional requirements, and dietitian-certified menus. Monitoring food costs, waste, inventory, and supply usage. Ensuring coolers, freezers, dry storage, and secured kitchen areas are locked when not in use. Rotating inventory using first-in, first-out procedures. Ensuring all perishable foods are properly covered, labeled when required, stored, and thawed safely. Maintaining a clean and sanitary kitchen in accordance with health regulations and facility policy. Ensuring equipment, production areas, and food service areas are cleaned and sanitized daily. Responding to food service concerns or complaints in a timely and professional manner. Reporting inmate worker issues, safety concerns, maintenance issues, or security concerns to the Facility Administrator or designee. Attending supervisor meetings and warden calls as required. Performing duties in accordance with MDOC policy, Stone County Regional Correctional Facility policy and procedure, PREA Standards, ACA Standards, and applicable health and safety requirements. Qualifications Applicants should meet the following qualifications: Four years of experience as a food service manager, production manager, kitchen supervisor, or similar position involving institutional or large-scale food preparation. A degree or certificate from a recognized culinary arts program may substitute for up to two years of required experience. Experience in correctional, institutional, school, hospital, military, or large-scale food service is preferred. Ability to supervise employees and inmate workers in a correctional environment. Ability to follow food safety requirements, sanitation standards, facility policies, and security procedures. Ability to maintain inventory records, production sheets, temperature logs, and other required documentation. Ability to communicate professionally with staff, supervisors, vendors, and inmate workers. Must be dependable, organized, and able to work in a secure correctional setting. Work Environment This position is located inside a correctional facility. The Kitchen Supervisor will work around correctional staff, civilian employees, vendors, and inmate workers. The position requires professionalism, accountability, and the ability to follow security procedures at all times. Schedule Schedule may vary based on facility needs. Availability for weekends, holidays, and emergency situations may be required.
