Operator will performs routine procedures, under limited supervision. Operation of mixing equipment, ingredient scaling equipment and systems. Preparation and mixing a variety of King's Hawaiian dough recipes using standardized processes in accordance with food safety practices. Work will consist of routine tasks requiring identification of problems, troubleshooting and everyday decision-making. Operate and monitor AZO and ISMAR systems. Monitor control panel, observe lights and dials to verify that panel and equipment is functioning. Listen for malfunction alarms, and shut down equipment and notify foreman and supervisors. Inspect mixing equipment such as; mixing tools, conveyors, fat feeder, liquids, and Techweigh blender to verify that equipment is operational. Monitor ingredient micro/minor AZO transfer system and componenter to make sure that there is a constant flow of ingredients to the blenders. Monitor dough pumps levels to obtain desired dough consistency. Assemble dough pumps as needed to set up per SKU. Monitor dough coming out of mixer making sure it meets desired specifications, i.e. consistency and temperature. Monitor fermentation tank to maintain at level per SKU. Transfer butter for batch using O2 mobile/MAS500 scanning systems. Transport butter into and out of the tempering room using FIFO method. Load butter into the fat feeders. Use bar code scanner to record the correct lot numbers for the butter. Transport rework dough to the mixing area and add re-work dough to the dough pump at the appropriate rate. Use rework dough using the appropriate WIP Rework Procedures FSQS 4.6 and WIP Dough Tracking Sheet
