Seasonal Traceability and Training Coordinator
Job Description
About the Position Flour Fusion LLC is seeking a detail-oriented Seasonal Traceability & Training Coordinator to support our Quality Assurance and Food Safety department at our commercial bakery in Perris, CA. This position will primarily support employee training coordination, traceability documentation, production record review, and overall QA documentation. The ideal candidate is organized, comfortable working in both an office and production environment, and able to follow up with employees and departments to ensure required records are accurate and complete. This is a seasonal position. The duration of the assignment will depend on business and operational needs and is not guaranteed for a specific period. Key Responsibilities
- Maintain and update the employee training matrix.
- Coordinate and track GMP, food safety, allergen, food defense, job-specific, and refresher training.
- Assign and track employee training through Alchemy LMS.
- Maintain electronic and hard
- copy training records and signed acknowledgments\.
- Identify overdue or incomplete training and follow up with employees and department leads.
- Support new-hire food safety and GMP training.
- Review completed traceability packets for accuracy and completeness.
- Review production records, batch documentation, lot codes, packout records, ingredient and packaging information, and shipping documentation.
- Follow up with Production, Inventory, Shipping, and QA regarding missing or incomplete records.
- Maintain organized traceability records for raw materials, packaging, work-in-process, and finished products.
- Support mock recalls, traceability exercises, lot tracking, and mass-balance documentation.
- Assist QA with documentation related to product holds, investigations, withdrawals, or recalls.
- Maintain training and traceability records in an organized and audit-ready condition.
- Assist with SQF and food safety audit preparation.
- Spend time on the production floor verifying records and understanding product flow from ingredient use through finished
- product packing.
- Provide additional QA/Food Safety documentation support as needed. Qualifications
- High school diploma or equivalent required
- 2 years of experience in food manufacturing, quality assurance, training coordination, document control, inventory, or production administration preferred.
- Food manufacturing experience strongly preferred
- GMP, SQF, HACCP, food safety, or traceability experience is a plus.
- Strong attention to detail and organizational skills
- Comfortable using Microsoft Excel, email, and electronic recordkeeping systems
- Experience with Alchemy LMS is a plus but not required
- Able to identify missing or inconsistent documentation and follow through until corrected
- Comfortable communicating with production employees, leads, supervisors, and management
- Able to work in a fast-paced food manufacturing environment and regularly enter production areas Schedule Requirements The regular schedule for this position is Friday through Tuesday from 10:00 AM to 6:30 PM, with Wednesday and Thursday off; Sunday work schedule start time 8am to 5pm Candidates must be available to work Friday, Saturday, Sunday, Monday, and Tuesday.
