The Assistant Dietary Manager assists with the daily operation of the Dietary Department at Brookview Healthcare Center. This position supports the Dietary Manager in ensuring residents receive nutritious, appealing, and properly prepared meals in accordance with individual dietary needs, physician orders, facility policies, and applicable federal and state regulations. The Assistant Dietary Manager helps provide leadership and supervision to dietary staff while promoting excellent customer service, food safety, sanitation, teamwork, and resident satisfaction.
ESSENTIAL DUTIES AND RESPONSIBILITIES
Assist the Dietary Manager with the overall daily operation of the Dietary Department. Help supervise, train, schedule, and provide direction to cooks and dietary aides. Assist with ensuring adequate staffing and coverage for scheduled shifts. Monitor meal preparation and service to ensure meals are prepared and served accurately and on time. Ensure resident diet orders, food preferences, allergies, food consistencies, and special dietary requirements are followed. Review meal trays and dining service for accuracy, appearance, appropriate portions, and proper temperatures. Assist with maintaining food safety and sanitation standards throughout the kitchen, storage areas, and dining areas. Monitor proper food storage, labeling, dating, rotation, and disposal procedures. Ensure refrigerators, freezers, food storage areas, equipment, and work areas are maintained in a clean and sanitary condition. Assist with food and supply inventory, ordering, receiving, and proper storage. Help monitor food costs, waste, portion control, and supply usage. Assist with employee orientation, training, coaching, and performance monitoring. Reinforce facility policies, infection-control practices, dress code, attendance expectations, and departmental procedures. Assist with preparation for regulatory surveys, inspections, and audits. Maintain required dietary records, temperature logs, sanitation records, and other documentation. Communicate resident concerns, dietary changes, and meal-service issues promptly to the appropriate team members. Work cooperatively with Nursing, Activities, Social Services, and other departments to meet residents' nutritional and dining needs. Assist with special meals, resident events, holidays, and facility functions. Perform cooking, food preparation, tray-line, or other dietary duties when necessary to support department operations. Assume appropriate departmental responsibilities in the Dietary Manager's absence as assigned. Perform other duties as assigned.
QUALIFICATIONS
High school diploma or GED required. Previous food service experience required; healthcare, skilled nursing, assisted living, or long-term care experience preferred. Previous supervisory or leadership experience preferred. Knowledge of food preparation, sanitation, food safety, and proper food-handling practices. Ability to understand and follow therapeutic diets, texture-modified diets, and resident-specific meal requirements. Strong organizational, communication, and leadership skills. Ability to supervise employees effectively and work as part of an interdisciplinary team. Must be dependable and able to work in a fast-paced healthcare environment. Must meet all applicable facility, state, and federal requirements for the position. Food safety or dietary-related certification is preferred or required when applicable under state or facility requirements.
PHYSICAL REQUIREMENTS
The employee must be able to: Stand and walk for extended periods. Bend, reach, push, pull, and perform repetitive movements. Lift and/or move food, supplies, and equipment consistent with facility safety requirements. Work around hot equipment, refrigeration/freezer areas, cleaning products, and typical commercial-kitchen conditions. Safely perform the physical functions necessary to complete assigned dietary duties.

WORK SCHEDULE
The Assistant Dietary Manager must have the flexibility to work schedules necessary to meet the operational needs of the Dietary Department, which may include weekends, holidays, early mornings, or evenings.
