Job Description
Kitchen Manager - Residential Clinic Full-Time, 40 hours per week
Schedule:
Monday through Friday, hours 9:00am to 5:30pmLocation:
45 Maple Street Dansville, NY 14437 Under the direct supervision of the Program Director, this position is primarily responsible for maintaining sanitary work conditions, food procurement, meal planning and preparation and food storage. Works within a budget to purchase food for all residents participating in all elements of our residential program. Essential Job Functions Work with the program director to stay within budget to purchase food for program participants. Work with clients to develop basic cooking skills, to develop an understanding of nutritional needs and a healthy diet. Prepare menu in advance and prepare a list of food supplies needed on a monthly basis and where supplies are to be ordered/obtained. Inventory supplies that are delivered to facility for area of responsibility. Verify receipts have been checked against food supplies and deliveries. Post menu on a monthly basis. Work with medical staff to ensure special needs diets are available. Ensures menus are reviewed by medical staff regularly.- Ensures meals provide significant nutrients and calories to meet special needs of residents.
- Menu planning will be discussed in community meetings to ensure prepared food appeals to all residents.
- Menus are to be adjusted according to resident taste, preferences and medical needs.
- Ensures food is stored properly in designated areas.
- Ensures all residents and staff receive food preparation, sanitation and safety instructions before assigning to kitchen work.
- Manages meal preparation and makes sure enough time and resources are available to prepare meals at designated times.
- Responsible for preparing three meals daily.
- Ensures that healthy snacks are available at any time day or night.
- Manages kitchen and ensures staff and residents working in the kitchen use gloves and hair nets and use appropriate safety precautions.
- Ensures dishes and cooking equipment are properly cleaned and stored and that the floors and countertops are properly cleaned.
- Responsible for kitchen staff and making sure they are all properly trained in safety and sanitation.
- Responsible for maintaining kitchen equipment and reporting any problems with equipment. Knowledge, Skills and Abilities
- Knowledge of sanitation and safety techniques and methods and working knowledge of operating kitchen equipment and small tools.
- Ability to work in a professional manner with vendors/landlords with attention to financial/contractual constraints.
- Strong attention to detail required
- Must be able to follow written and verbal directions
- Must be capable of working in a fast paced environment that may include multiple interruptions.
- Must have the capacity and compassion to work around a varied client base with diverse challenges and psychological/emotional trauma.
- Ability to plan and organize and work collaboratively with staff and residents.
