Job Description

Completes initial nutritional assessment on each resident. Completes resident nutritional plan of care, chart on residents in medical chart. Updates on a minimum of quarterly. Responsible for supervision of Dietary Staff as assigned by Dietary Manager.
EDUCATIONAL REQUIREMENTS
Must be certified in
SAFE AND SERVE
Education in Dietetic programs. Basic computer skills. Two (2) years' experience with quantity food production, clinical skills and ability to supervise dietary staff. Ability to manage, train, develop, direct and maintain interpersonal relationships with the staff and the residents. Responsible for development and maintaining MDS (RAPs and triggers), nutritional histories and assessments on all residents. Documents progress notes on all residents of progress of nutritional status and coordinates with the Interdisciplinary Care Plan team in care plan development. Responsible for making decisions, organizing, motivating staff, use of materials and equipment in a manner to obtain cooperation and efficient use of resources. Supervises Head Cooks, Cooks and Dietary Aide staff on a daily basis. Confers with Dietary Manage on policies and procedures for the dietary department with emphasis on food production, tray service, resident nutritional care and supervision of Dietary staff. Coordinates with the Consultant Registered Dietitian in areas of resident nutritional assessed needs. Accountable for the proper storage of all foods and supplies used by the Dietary department. Ensures that all food preparation follows required sanitation procedures and meets requirements of Food Handling procedures. Evaluates and provides direction in food production including standardizing recipes, portion control, problem solving and Quality Assessment and Assurance activities. Responsible for regular participation in department meetings and provides training of Dietary staff. Provides residents and families with nutritional education as indicated and appropriate. Communicates with nursing staff regarding nutritional status of residents and provides recommendations needed to meet resident identified needs. Responsible for setting up cardex, tray tickets, charts and files diet requisitions on all residents. Responsible for developing, teaching, monitoring and enforcing safety guidelines to create a safe working environment for the Dietary staff. Supervises and monitors employee work habits to ensure proper back safety practices are used.
