madronabakery.com Madrona Bakery is looking for an experienced, focused night owl to join our overnight pastry team. If you know your way around a commercial kitchen, love the rhythm of high-volume production, and want to keep growing as a baker, this is a great next step: you'll learn lamination, train under our Head Chef, and have a path to a full-time role with benefits. Who we are Madrona is a bakery, bottle shop, and event space in Downtown Mill Valley. We specialize in laminated pastries, wood-fired bread, and excellent coffee. We use locally sourced and organic ingredients whenever possible. The role You'll work overnight alongside another AM baker, under the direction of our Head Chef, helping produce a large share of our daily pastry so the cases are full when we open. The work calls for a strong sense of urgency, sharp attention to detail, and excellent time management to keep many products moving at once. What you'll do Production Proof and bake off laminated pastries for the morning Produce quick breads, cookies, muffins, and other pastry items in large quantities Prep glazes, fillings, and fruit and vegetables for service Occasionally assist with bread production Make pies, specialty cakes, and tarts during the winter holidays Learning & growth Learn lamination and croissant making Train under our Head Chef on technique and production Get exposure to our bread program and wood-fired oven Keep building your knowledge of pastry and bread Kitchen & team Work closely with your fellow AM baker and follow direction from our Head Chef Hand off smoothly to the morning team Keep your station and equipment clean and organized at all times Follow health department and food safety requirements Follow opening procedures, including locks and our alarm system What you'll need At least one year of commercial pastry or bread production experience Working knowledge of leavened and laminated pastries, including proofing Experience producing large quantities in a commercial kitchen Excellent time management, and the ability to juggle multiple products under a deadline Availability to work overnight, midnight-8:00am Current California Food Handler Card or ServSafe certification Ability to carry up to 50 lbs and stand for a full shift Reliable transportation to and from overnight shifts Nice to have: experience with wood-fired ovens or lamination What we offer Hands-on training in lamination under our Head Chef Exposure to our bread program and wood-fired oven Opportunity to move into a full-time role after 90 days Health insurance for full-time team members (after 30 days of full-time employment) Pooled tips averaging $4-5/hour on top of base pay Employee discounts A safe and supportive work environment How to apply Send your resume and a few lines on why you think you'd be a good fit to jobs@madronabakery.com.
