Come cut meat where the work is respected and the case is always full. We're looking for a butcher / meat cutter with real knife time who wants to sharpen their skills — and grow into wild game processing as we expand. About Us Midwestern Meats is a family-owned, full-service retail meat market in Mesa — 10,000 square feet of fresh beef, pork, chicken, lamb, house-made sausages, bundles, and custom boxes. We've built our reputation on quality cuts and old-fashioned counter service, and we're growing: wild game processing and a quick-service restaurant are both on the way. About the Role You'll work the block and cutting room — breaking down primals into retail cuts, grinding, trimming, and helping keep our service case stocked and beautiful. You have some real cutting experience already; we'll develop the rest, from custom cutting to sausage making, and as our wild game processing program launches, you'll have the chance to build skills most shops never offer. What You'll Do Break down primals and sub-primals into retail and custom cuts Operate grinders, saws, slicers, and other cutting-room equipment safely Trim, portion, and merchandise cuts to keep the service case full and display-ready Fill custom and special orders with accuracy and care Maintain a clean, sanitary work area to food-safety standards Help at the counter when it's busy — our customers love talking to the person who cut their steak
