Job Description Asian Cajun is seeking an experienced Sushi Chef to join our team. This position is responsible for preparing and serving high quality sushi while working alongside our existing sushi chefs. The ideal candidate has strong sushi preparation and knife skills, understands proper handling of raw seafood, works efficiently during high-volume service, and takes pride in presentation, consistency, cleanliness, and quality. This position is focused specifically on the sushi bar and does not require management of the entire restaurant or hot kitchen. Duties & Responsibilities Prepare sushi, sashimi, nigiri, rolls, and other sushi-bar menu items according to restaurant standards. Work collaboratively with the other sushi chefs during daily service. Maintain consistent portion sizes, presentation, taste, and quality. Properly break down, portion, store, rotate, and handle fish and other seafood. Prepare sushi rice, sauces, garnishes, vegetables, and other sushi-bar ingredients. Monitor sushi-bar inventory and notify management when ingredients or supplies need to be ordered. Minimize seafood waste through proper cutting, portioning, storage, and inventory rotation. Maintain proper FIFO procedures and food-storage standards. Ensure raw seafood is handled safely and kept at appropriate temperatures. Keep the sushi bar, cutting boards, knives, equipment, refrigeration, and work areas clean and organized. Follow California food-safety and sanitation requirements. Assist with receiving and checking seafood and sushi-bar products for freshness and quality. Maintain adequate prep levels for anticipated business volume. Coordinate with servers and kitchen staff to ensure orders are prepared accurately and efficiently. Communicate product-quality, inventory, equipment, or staffing concerns to management. Provide professional and friendly interaction with guests seated at the sushi bar. Complete opening, closing, prep, and cleaning responsibilities for the sushi station. Requirements Previous professional sushi-chef experience required. Strong sushi, sashimi, nigiri, and roll-making skills. Strong knife skills and ability to portion fish accurately. Knowledge of proper raw-fish and seafood handling. Understanding of food safety, sanitation, cross-contamination prevention, and temperature control. Ability to maintain quality and speed during busy service periods. Ability to work effectively as part of a sushi team. Reliable, punctual, organized, and able to maintain a clean workstation. Ability to communicate professionally with management, coworkers, and guests. Ability to stand for extended periods and perform repetitive food-preparation tasks. Ability to safely lift and move food products and supplies as required. Must have a current California Food Handler Card at the time of hire. Preferred Qualifications Experience working in a high-volume sushi restaurant. Experience breaking down whole fish and maximizing usable yield. Knowledge of seafood inventory, food cost, portion control, and waste reduction. Schedule Full-time, 40 hours per week . Availability for evenings, weekends, and holidays is required based on restaurant business needs.
