In this role, you will be responsible for preparing fresh sushi and other Japanese-inspired dishes with precision and creativity, ensuring the highest standards of food quality, safety, and presentation. Your energetic approach will help set the tone for a busy day in our kitchen, delivering exceptional breakfast and lunch offerings to delight our guests. The ideal candidate will bring a strong foundation in food preparation, knife skills, and high-volume production experience, with a keen eye for detail and a love for culinary artistry. Duties Prepare and assemble sushi rolls, sashimi, nigiri, and other Japanese dishes according to established recipes and presentation standards Ensure all ingredients are fresh, properly stored, and handled in accordance with food safety protocols Operate kitchen equipment such as rice cookers, slicers, blenders, and refrigeration units efficiently and safely Maintain cleanliness and sanitation of workstations following food safety sanitizing procedures throughout the shift Assist in menu planning by suggesting new sushi combinations or seasonal specials to enhance customer experience Support food production for breakfast and lunch service by prepping ingredients like fish, vegetables, rice, and garnishes Follow recipe adherence meticulously to ensure consistency in taste and presentation Manage high-volume food preparation efficiently during busy morning hours while maintaining quality standards Collaborate with team members to ensure smooth kitchen operations and timely delivery of orders Qualifications Proven experience as a sushi chef or culinary professional with a focus on Japanese cuisine or fine dining environments Strong knife skills and proficiency in food handling techniques such as poaching, braising, grilling, and food preparation methods Background in dietary aide or dietary department work is a plus; familiarity with dietary restrictions is beneficial Experience with food safety management practices including sanitizing procedures and proper food storage Knowledge of menu planning, recipe adherence, and meal preparation for high-volume production environments Excellent organizational skills with the ability to operate kitchen equipment safely and efficiently Previous restaurant or food industry experience demonstrating food service excellence Ability to work early mornings consistently while maintaining energy and enthusiasm throughout the shift Join us as a Morning Prep Sushi Chef where your culinary skills will shine!
