Prepare and present sushi, sashimi, nigiri, maki, and other menu items according to the restaurant's recipes, specifications, and presentation standards Demonstrate excellent knife skills and precision when cutting, portioning, and preparing fish and other ingredients Handle and prepare premium seafood and ingredients with care, attention to detail, and respect for product quality Maintain exceptional standards for freshness, flavor, texture, portion control, and presentation Prepare sushi rice, sauces, garnishes, and other components according to established recipes and standards Set up and maintain the sushi station to ensure all ingredients, tools, and equipment are properly prepared and readily available for service Maintain a clean, organized, and fully stocked workstation throughout the shift Monitor the quality and freshness of seafood, produce, and other ingredients and communicate any concerns to kitchen leadership Properly store, label, date, and rotate ingredients in accordance with food safety standards Follow proper food handling, sanitation, and temperature-control procedures at all times Work efficiently and accurately during high-volume service while maintaining consistency and attention to detail Communicate clearly and respectfully with kitchen leadership, fellow chefs, servers, and other team members Coordinate with the kitchen and front-of-house teams to ensure smooth and timely service Provide knowledgeable and engaging interaction with guests when working at an open sushi counter Answer guest questions regarding ingredients, preparation methods, and menu offerings when appropriate Assist with daily preparation, inventory, receiving, cleaning, opening, and closing responsibilities Support and train less-experienced kitchen team members when needed Contribute to a positive, professional, and team-oriented kitchen environment Maintain the restaurant's standards for professionalism, personal hygiene, grooming, and uniform presentationQualifications & Requirements:
Previous professional sushi chef experience preferred; experience in an upscale, high-end, or omakase-style sushi restaurant is highly valued Strong knowledge of sushi preparation, traditional techniques, seafood handling, and Japanese culinary practices Excellent knife skills with the ability to consistently produce precise cuts and portions Strong understanding of fish quality, freshness, storage, and proper handling Knowledge of sushi rice preparation and proper rice seasoning Exceptional attention to detail and a strong commitment to quality and consistency Ability to maintain high standards of presentation and execution during busy service periods Strong communication and interpersonal skills Ability to work effectively as part of a professional kitchen team Ability to remain calm, focused, and professional in a fast-paced, high-pressure environment Strong organizational and time-management skills Ability to multitask while maintaining accuracy and consistency Ability to follow direction from kitchen leadership while also demonstrating initiative and sound judgment Commitment to food safety, sanitation, and maintaining a clean and organized workstation Ability to stand and walk for extended periods throughout a shift Ability to bend, stoop, reach, and perform other physical tasks required in a professional kitchen Ability to lift and carry ingredients, supplies, and equipment as required Flexibility to work varied shifts, including mornings, evenings, weekends, and holidays Professional appearance, personal grooming, and uniform presentation consistent with the restaurant's standards Positive, team-oriented attitude with a willingness to assist colleagues whenever neededBenefits
