With properties in stunning locations such as Maine's Acadia National Park, the Southern Maine Beaches, and New Hampshire's White Mountains, Lafayette Hotels offers a perfect blend of work and adventure.www.visitlafayettehotels.comJob Summary We are seeking a positive, service-oriented, energetic and self-motivated Executive Chef to join our team at the Norseman Resort in Ogunquit. The Executive Chef will work closely with our General Manager and Corporate Director of F&B. Must supervise, train, teach and coordinate the kitchen and food prep staff in all aspects of our beachfront restaurant Splash, (open 7a-6p in peak season (high volume, quick service), 7a-3p shoulder season) and Ogunquit Beach Store quick service window. Our season runs from April - October. This is a working chef position.

Ogunquit Beach is Maine's premiere beach destination, and we are Ogunquit Beach's only beachfront restaurant. Enjoy a beautiful ocean view every day from the kitchen.

Our restaurant is open seasonally here in Ogunquit. This position can be seasonal, or year round with opportunities to help in other departments and locations in the off season.

Daily Duties Oversee and supervise team of 5-7 line cooks and Sous Chef in performing their assignments in a quality and timely mannerEnsure high quality, consistent food reaches the table in a timely manner for high volume quick serviceDevelop modern casual beachfront breakfast and lunch menuDaily and weekly ordering based on sales, limiting food wasteMaintain a safe, clean and efficient operation of the entire kitchen facility, including use of slicers, knives, cooking equipment, dishwasher machinery, steamers and ServSafe environmentEnsure all equipment is kept in good working order and co-coordinating repairs and maintenance with the engineering departmentMaintain constant communication with the FOH manager, general manager and F&B Director to ensure the best possible product is reaching the guestSupervise the overall day to day operations of the kitchenAdhere to all corporate required purchasing policies and controls, including brand standard policesMaintain an organized system within the department for inventory on monthly basis, safe handling and storage of food and equipmentEnsure that all food is properly handled, cooked and storedBuild a strong professional team in the kitchenRequirements & QualificationsThis position requires the ability to work long hours, holidays (July 4, Memorial Day, Labor Day etc) and multiple days in row when business dictatesMust be willing to have a flexible scheduleMust be willing to work the line as neededMust be able to stand for 8 hours and pull and push 50 lbsHigh school diploma or GEDCulinary School diploma preferredSeasonal work experience preferredServSafe certified requiredKnowledge of local food handling laws preferred (
