Job Overview We're looking for a passionate and skilled Smokehouse Pitmaster to lead our barbecue operations. In this role, you'll be the heart of our smokehouse, crafting mouthwatering smoked meats and ensuring every dish meets our high standards. The ideal candidate is enthusiastic about barbecue, experienced in culinary techniques, and eager to create memorable dining experiences for our guests. Duties Prepare and smoke a variety of meats using traditional wood smoking methods Follow Hank's methods and menus that highlight smoked meats while maintaining consistency with recipes and quality standards. Oversee all aspects of meat preparation, including seasoning, marinating, cutting meats, and food safety sanitizing procedures. Operate kitchen equipment such as smokers, grills, knives, and other culinary tools safely and efficiently. Maintain cleanliness and organization in the smokehouse area, adhering to food safety management practices. Collaborate with kitchen staff on food production schedules to ensure high-volume meal preparation runs smoothly. Ensure all dishes are prepared according to recipe adherence and quality standards for both dine-in and catering services. Requirements Proven experience in food industry roles such as culinary arts, restaurant work, or catering with a focus on barbecue or smoking techniques. Strong knowledge of food safety sanitizing procedures, food handling, and hygiene regulations. Experience with high-volume food production. Skilled in operating kitchen equipment including smokers, grills, braising pots, and other culinary tools. Excellent knife skills along with experience in grilling, and other cooking methods. Ability to work efficiently under pressure while maintaining attention to detail in a fast-paced environment. Pay:
$20.00 - $30.00 per hour Expected hours: 35.0 - 40.0 per week
