  • and we're building a kitchen team that takes pride in cooking real food the right way. Job Summary This isn't a burger-flip job. Our menu is built on dishes that take real technique to execute well
  • bone-in pork chop sandwiches, mountains of caramelized onions, Italian beef, and the original Maxwell Street Polish. As a Cook , you'll work the grill, fryer, and prep stations under the direction of our Lead Cook, prepare orders fast and to spec, and keep the kitchen running clean through breakfast, dinner, and our famous late-night rushes.   • this is the kitchen for you. Key Duties & Responsibilities Prepare and cook all menu items to Jim's portion, presentation, and quality standards on every ticket. Keep the line stocked. Maintain adequate quantities of cooked product on the grill so orders fly out fast during peak service. Operate equipment safely
  • grill, fryer, knives, spatulas, slicers, steam table, and other kitchen tools
  • and maintain proper grill temperatures throughout the shift. Follow recipes and portion specs. Hit the same quality every time
  • no shortcuts, no eyeballing, no "close enough.
" Communicate professionally with Sandwich Makers, Cashiers, and Shift Leaders to keep orders accurate and on time. Handle product properly. Store, restock, and rotate ingredients FIFO; properly dispose of any unusable product. Keep it clean. Maintain a clean, sanitized, orderly work area throughout your shift, and break down/clean kitchen appliances and equipment at end of shift. Practice food safety. Apply proper glove use, hand-washing, holding temperatures, and allergen handling per California Retail Food Code. Communicate shortages of food product, oil, or supplies to the Lead Cook before they become a problem. Report concerns immediately

  • to the Lead Cook or Shift Leader.
Qualifications 1+ year of cooking experience in a restaurant, hotel, fast-casual, or commercial kitchen. Open to candidates with strong potential and a real interest in learning the craft. Solid grill and fryer skills. Comfortable working a flat-top and fry station, multitasking multiple orders without losing track. Basic knife skills and the ability to follow recipes, portion specs, and prep instructions accurately. Strong work ethic and the ability to keep pace during high-volume rushes without dropping quality. Team player
  • communicates clearly, helps teammates, and shows up ready to work.
California Food Handler Card within 30 days of hire. Physical readiness. Able to stand for an entire shift, work near hot equipment, use hands continuously, and lift up to 80 lbs. Bonus points. Chicago-style food experience, bilingual (English/Spanish), or culinary school / chef-led training.
