The starting pay range for this position is $24.00
•$26.00 per hour. This is the pay for this position that Outrigger Canoe Club reasonably expects to pay. Decisions regarding individual pay will be based on a number of factors, such as experience and education.

We are looking for a skilled and detail-oriented Sushi Cook to prepare sushi, sashimi, rolls, appetizers, and other menu items according to the chef's specifications and established recipes. The Sushi Cook will be responsible for properly preparing and handling seafood, preparing sushi rice and other ingredients, maintaining an organized and sanitary sushi station, and ensuring that all food is presented with consistency and attention to detail.
Core Responsibilities:
The job duties listed below are an overview of the essential duties and measures required to be successful in the position. Set up and stock the sushi station with all necessary ingredients, equipment, utensils, and supplies. Prepare sushi rice according to established recipes and standards, including proper seasoning, temperature, and consistency. Prepare sushi, sashimi, nigiri, maki rolls, hand rolls, appetizers, sauces, garnishes, and other menu items according to chef specifications. Properly clean, trim, portion, and prepare fish and other seafood for sushi and sashimi service. Demonstrate proper knife handling and cutting techniques to produce consistent portions and presentation. Maintain proper storage, labeling, dating, and rotation of seafood and other perishable ingredients. Monitor the quality, freshness, and appearance of seafood, produce, rice, and other ingredients. Prepare ingredients for service, including vegetables, sauces, garnishes, and specialty items. Ensure sushi orders are prepared accurately, attractively, and in a timely manner. Work closely with other kitchen staff to ensure food is completed and served simultaneously. Follow Executive Chef, Sous Chef, and designated Sushi Chef instructions and recipes. Maintain proper portion control and minimize food waste. Ensure all sushi and food products are handled and stored according to applicable food safety and sanitation standards. Maintain appropriate temperatures for raw and cooked foods and follow established procedures for handling raw seafood. Keep the sushi station, equipment, knives, cutting boards, refrigeration units, and surrounding areas clean and organized throughout service. Clean and sanitize the station and equipment at the end of each shift. Assist with receiving, storing, and rotating inventory as needed. Communicate effectively with the kitchen team regarding product availability, quality concerns, special requests, and service needs. Assist other kitchen stations and culinary team members as needed. Maintain a positive and professional approach with coworkers and members/guests. Comply with all applicable nutrition, sanitation, food safety, and workplace safety regulations and Outrigger Canoe Club standards.
