Job Description

Prep Cook/Culinary Team-Temporary Department:
Campus Dining - Administration - 170310 Minimum Qualifications Ability to interact effectively with coworkers and vendors of diverse ages, backgrounds, and interests. Ability to work as a team member under rushed conditions without loss of efficiency or effectiveness. Knowledge of kitchen safety and terminology. License/Certification Required Essential Job Functions Prepare food so that quality, taste and appearance of food is in accordance with Campus Dining standards. Prepares product based on the prediction of Cooks, Managers, and Supervisors. Checks and adjusts thermostat to regulate temperture of ovens, broilers, grills, roasters, steam kettles, steamers, and fryers. Measures and mixes ingrdients according to recipe to prepare soups, salads, gravies, desserts, sauces, and casseroles. Bakes, roasts, broils, fries, and steams meats, fish, vegetables, and other foods. Adds seasoning to foods during mixing or cooking. Observes and tests foods being cooked by tasting, smelling, using a probe thermometer and piercing with fork to determine that it is properly cooked. Carves meats, portions food on serving plates and buffet pans, adds gravies and sauces, and garnishes servings to fill orders. Washes, peels, cuts, and shreds vegetables and fruits to prepare them for use. Butchers chickens, fish, and shellfish. Cuts, trims, and bones meat prior to cooking. Bakes bread, rolls, cakes, and pastry as needed. Control proper usage and rotation of food. Ensure food quality and appearance on buffet. Alert chef or direct supervisor to any food quality issues that could have an adverse effect on culinary operations. Maintain par levels of stock and prep of food items. Maintain walk-in coolers and food storage areas on a daily basis. Maintain a neat, clean, and sanitary workstation. Ensure food is prepared and plated within App State time frame. Knowledge, Skills, & Abilities Required for this Position Preferred Qualifications Culinary experience in a professional kitchen. Culinary School/ACF Certification preferred.
Work Schedule/Hours:
Schedule varies depending on business need and on unit. Some weekend work may be required.
