Responsibilities Lead and coordinate all aspects of catering food preparation, ensuring timely delivery of high-quality meals for large-scale events. Develop and execute creative menus that meet client specifications, dietary needs, and nutritional guidelines. Supervise kitchen staff, providing training on food safety sanitizing procedures, knife skills, and proper use of kitchen equipment. Oversee food handling practices to maintain strict adherence to food safety management protocols and sanitation standards. Prepare a variety of dishes using advanced techniques such as poaching, braising, grilling, and other cooking methods suited for high-volume production. Monitor inventory levels, order supplies, and manage food production schedules to optimize efficiency and minimize waste. Ensure compliance with all health regulations and safety procedures while maintaining a clean, organized kitchen environment. Requirements Proven experience in dietary aide roles or dietary department settings with a strong understanding of special dietary needs. Extensive culinary experience with a focus on menu planning, food preparation, and recipe adherence in both fine dining and catering environments. Demonstrated proficiency in operating commercial kitchen equipment including grills, ovens, mixers, and food processing tools. Strong knowledge of food safety sanitizing procedures, food handling practices, and sanitation standards required by health authorities. Skilled in various cooking techniques such as braising, grilling, poaching, and general meal preparation for large groups. Previous restaurant or high-volume catering experience with a focus on food production and service excellence. Excellent knife skills combined with the ability to manage multiple tasks efficiently under pressure. Leadership qualities with experience supervising kitchen staff in fast-paced settings; ability to foster teamwork and motivate others.
