Job Description:
This position is a foundational element to the success of the restaurant. The Prep Cook position ensures the larger success of the line cooks through accurately assessing product levels of prepared recipes to business needs, alongside Chef's approval. Adhering to the standardized recipes set forth by the Chef will ensure that the restaurant is set with a strong foundation for service and day to day operations. Below you will find a list of Prep Cook responsibilities: Assess product levels of prepared recipes List recipes that will need to be prepared for the day (with Chef approval) Complete the recipes lined out for the day Properly handle proteins and vegetables to prevent cross contamination Properly cool and handle recipes per safety standards Properly label recipes that are prepared by the Prep team Manage the labeling of the Walk-in fridge Break down and properly store produce, meat, and dry good orders Manage the organization of the Walk-in fridge Communicate with Chef when products fall below the set pars Pull items to thaw, if needed Clean and sanitize the Prep station throughout the shift Take out trash as needed throughout the shift Ensure the prep floor is clean and clear of debris throughout the shift Assist with stocking the line for service Assist the dishwashers when time permitsRequirements:
The listed items below are essential for the success within the position: Must be at least 18 years of age Minimum 1 year experience as a line cook, prep cook, or higher position Culinary training, Highschool diploma, GED preferred Must have a current California Food Handlers card or similar certification. Have knowledge of restaurants skills including equipment Willingness to support the team and restaurant for success Ability to lift or move 50 pounds, frequently Ability to kneel, bend, and stoop, frequentlyRate:
