The Restaurant Manager is responsible for ensuring smooth and efficient restaurant operations while maintaining high standards for food quality, guest service, cleanliness, safety, and employee performance. The Restaurant Manager will lead both Front of House (FOH) and Back of House (BOH) operations, coach and develop employees, manage labor and scheduling, control food and supply costs, and ensure Lotus Seafood standards and procedures are followed consistently. The ideal candidate is a hands-on leader who can work in a fast-paced restaurant environment, solve problems quickly, hold employees accountable, and create a positive team culture while delivering an excellent guest experience. Key ResponsibilitiesDaily Restaurant Operations Oversee all daily FOH and BOH restaurant operations. Ensure the restaurant is fully prepared before opening and properly secured at closing. Maintain Lotus Seafood standards for food quality, service, cleanliness, and speed. Conduct opening, mid-day, and closing manager responsibilities. Ensure all stations are properly staffed, stocked, and operating efficiently. Monitor ticket times, order accuracy, food quality, and guest satisfaction. Ensure all restaurant equipment is operating properly and report maintenance issues promptly. Monitor dining room, restrooms, kitchen, parking lot, and overall restaurant cleanliness. Team Leadership & Employee Management Lead, supervise, coach, and develop restaurant employees. Train new employees on Lotus Seafood procedures, menu knowledge, POS systems, customer service, food safety, and station responsibilities. Conduct pre-shift meetings and communicate daily goals, promotions, specials, and operational priorities. Assign employees to stations based on business needs and employee strengths. Hold employees accountable for attendance, punctuality, performance, cleanliness, uniform standards, and company policies. Provide ongoing coaching and corrective action when necessary. Recognize strong employee performance and help develop future leaders. Maintain a professional, respectful, and team-oriented work environment. Scheduling & Labor Management Assist with creating employee schedules based on projected sales and business needs. Monitor daily labor and make staffing adjustments when necessary. Ensure employees are clocking in and out correctly. Monitor breaks and overtime. Ensure proper management coverage during peak business hours. Adjust staffing levels throughout the shift to maintain service speed while controlling labor costs. Guest Service Provide exceptional customer service and lead by example. Be visible and engaged with guests during operating hours. Monitor cashier and FOH interactions with customers. Address customer complaints and service issues professionally and promptly. Resolve guest concerns while protecting company policies and profitability. Monitor online orders and third-party delivery orders for accuracy and timeliness. Ensure guests receive the correct food, sauces, sides, drinks, and modifiers. Food Quality & BOH Operations Ensure all food is prepared according to Lotus Seafood recipes, portion standards, and cooking procedures. Monitor food presentation, portion control, temperature, freshness, and consistency. Conduct regular line checks and verify station readiness. Ensure prep sheets are completed accurately and on time. Monitor food holding times and discard expired or improperly held food. Ensure proper food storage, labeling, rotation, and FIFO procedures. Work closely with the Kitchen Manager and kitchen team to maintain BOH efficiency. Ensure all food safety and sanitation procedures are followed. Inventory & Cost Control Monitor food, beverage, packaging, and supply inventory. Assist with receiving deliveries and verifying quantities and product quality. Monitor waste, over-portioning, spoilage, and product shortages. Maintain proper product rotation and storage. Assist with inventory counts and ordering as assigned. Identify opportunities to reduce food and supply costs without sacrificing quality. Monitor high-cost products and ensure proper portion control. POS Monitor POS transactions, discounts, voids, refunds, comps, and order corrections. Ensure all online and in-store orders are entered correctly. Monitor sales reports and daily restaurant performance. Sales & Restaurant Performance Monitor daily sales and identify opportunities to increase revenue. Ensure employees use suggestive selling and promote approved specials and add-ons. Monitor best-selling items, promotions, and customer trends. Communicate daily sales goals to the team. Review restaurant performance and identify areas requiring improvement. Work with management to improve sales, service, labor, food costs, and overall profitability. Cleanliness, Safety & Compliance Maintain high standards of cleanliness throughout the restaurant. Ensure opening, closing, and deep-cleaning procedures are completed correctly. Verify that employees follow proper handwashing, food handling, sanitation, and temperature-control procedures. Ensure chemicals and cleaning supplies are properly stored and used. Enforce all company safety policies and procedures. Report accidents, injuries, equipment issues, and other incidents to upper management immediately. Ensure employees follow uniform and personal appearance standards. Communication & Accountability Communicate effectively with General Management and ownership. Report operational issues, employee concerns, customer complaints, equipment problems, and inventory issues promptly. Complete required manager checklists, logs, and reports accurately. Follow all Lotus Seafood policies, SOPs, and management directives. Ensure employees understand and follow company procedures. Take ownership of the restaurant's performance and lead the team by example. Qualifications & Experience Previous restaurant management or supervisory experience preferred. Experience in a fast-paced restaurant, fast-casual, or high-volume food-service environment preferred. Strong leadership and communication skills. Ability to train, coach, and hold employees accountable. Strong understanding of restaurant FOH and BOH operations. Experience with POS systems and cash handling. Knowledge of food safety and sanitation procedures. Ability to manage labor, inventory, food quality, and customer service. Strong organizational and time-management skills. Ability to multitask and remain calm under pressure. Must be dependable, professional, and willing to lead by example. Bilingual abilities are a plus. Food Handler certification and TABC certification preferred/required as applicable. Physical Requirements Ability to stand and walk for extended periods. Ability to work in a hot, fast-paced kitchen and restaurant environment. Ability to lift and carry supplies and equipment as needed. Ability to bend, reach, push, pull, and move throughout the restaurant. Ability to work during busy periods, weekends, holidays, and other high-volume shifts as required.
