A Microbiologist studies microorganisms such as bacteria, fungi and parasites. Collects samples and grows cultures; isolates and classifies microorganisms and studies their structure, growth and development; monitors the effect of microorganisms on other organisms and the environment.
1. Duties and responsibilities 1.1 Microbiology consulting: § Issue recommendations on the microbiological and physico-chemical analysis to be performed on different products (food, natural, cosmetic...): microorganisms to be tested, selection of the method of analysis, sampling plan and results interpretation. § Sampling and collection of products and surfaces for microbiological analysis § Design Shelf-life study § Implement an in-house laboratory (microbiological and biochemical analysis/ pesticides, allergens and mycotoxins)) § Development of challenge test protocol § Investigation of microbiological contamination § Development and implementation of a corrective action plan in the event of a contaminated product 1.2 Food Safety Management System (FSMS)
Consulting:
§ Assist in the development, validation, verification, implementation and maintenance of SQF Systems as a registered SQF consultant by SQFI. § Identify and assess potential food safety hazards (biological, chemical (including allergens), and physical) and quality defects at all links in the food supply chain. § Assess the effectiveness of methodologies for controlling food safety hazards and quality defects identified. § Develop, document and maintain procedures for the control of food safety and quality risks in relation to regulatory and market requirements. § Validate critical control points (cooking, reheating, hot holding, cooling, high pressure treatment, heat treatment, regulated additive concentrations…) § Identify food safety and quality objectives § In addition to SQF, work with other GFSI (Global Food Safety Initiative) standards like BRC and
FSSC 22 000.
§ Collaborate with management and employees to create a food safety culture awareness and accountability. 1.3 Food Safety Management System (FSMS)
Audits:
§ Work directly with clients to plan, lead and organize desk or on-site Food Safety Management System (FSMS)• audits•. •FSMS audits: HACCP; SQF; BRC;
FSSC 22 000.
•Audits can be internal (first), second- or third-party audits. § Prepare and send to the auditee an audit plan using appropriate documents and forms before the audit § Conduct opening meetings, explaining the broad objectives, the scope, audit process and establishing audit plan. § Conduct audits, seeking conformity to applicable standard; by interviewing relevant personnel, making observations and inspections and sampling records. § Complete audit reports using provided checklists. § Summarize audit findings and communicate them effectively to the client (closing meeting). § Assess corrections, corrective action/plans and corresponding evidence. § Conduct audit follow-up and non-conformities (NC) closure. 1.4
Microbiology and Food Safety Training:
§ Develop and provide microbiology and food safety trainings. § Aid course attendees in understanding the application of the knowledge to their own operations, products and processes. § Adapt presentation of course content to suit the needs of participants. § Appraise participant knowledge to determine learning needs. § Facilitate participant learning using a variety of adult teaching methods. § Demonstrate appropriate and effective communication with course attendees. 2. Required education & work experience: § Bachelor's degree in microbiology or related Sciences required. § Minimum 10 years food safety consulting & auditing in different food sector categories, microbiology and training experience. § Must be SQF certified. § Qualified in HACCP and GFSI (SQF; BRC;
