ASAP ABOUT THE ROLE

We are immediately hiring a skilled Overnight Bread Baker to join our bakery team in Frankenmuth, MI. This overnight position is responsible for producing fresh, high-quality artisan and traditional breads ready for our customers each morning. If you are a dependable early riser (or night owl) with a passion for bread baking, this is the role for you. Overnight shift differential pay available.

KEY RESPONSIBILITIES

Mix, proof, shape, and bake a full range of breads including sourdough, rye, whole wheat, dinner rolls, and specialty loaves Follow established recipes and production schedules to ensure daily bread supply is ready by opening Operate and maintain commercial ovens, mixers, proofers, and other baking equipment Monitor dough fermentation, proofing times, and baking temperatures to ensure consistent quality Properly store and rotate ingredients and finished products to maintain freshness Maintain a clean, sanitary, and organized baking area throughout the overnight shift Conduct end-of-shift inventory and report any supply needs to management Communicate any equipment issues or production concerns to the morning team

REQUIREMENTS

5+ year of professional bread baking or commercial baking experience Availability to work overnight shifts (typically 10:00 PM

• 6:00 AM or similar) Ability to work independently with minimal supervision during overnight hours Knowledge of bread-making techniques including lamination, scoring, and proofing Physical ability to stand for full shift and lift up to 50 lbs Reliable and punctual with a strong work ethic

PREFERRED QUALIFICATIONS

Experience with artisan or sourdough bread production Familiarity with commercial baking equipment and large-batch production Food Handler's Certificate or ServSafe certification
