Join Our Team:
Retail & Restaurant Floor Manager Location:
Florida (On-site / Dockside & Facility Operations) About the Role We are seeking a detail-oriented Stone Crab Manager to oversee the handling, preparation, and regulatory compliance of our stone crab claw operations. In this role, you will ensure all seafood handling complies with Florida Fish and Wildlife Conservation Commission (FWC) regulations, state quality control standards, and federal HACCP guidelines.
Key Responsibilities Processing Operations:
Manage handling, storing, preparing (including cooking), freezing, changing market forms, preserving, packing, labeling, dockside unloading, and holding stone crab claws for sale.
Compliance Management:
Ensure facility and vessel operations strictly adhere to FWC rules, state quality control standards, and seafood HACCP regulations.
HACCP Implementation:
Develop, implement, and maintain a Hazard Analysis and Critical Control Point (HACCP) plan.
Regulatory Oversight:
Maintain compliance with state and federal standards, including Florida Statutes Chapter 379 (Marine Resources), Florida Administrative Code Chapters 68B and 68E-27F.A.C, and 21 CFR Part 121.
Sustainability Standards:
Ensure all harvested products align with FWC rules regarding minimum claw size and seasonal closures, respecting the unique autotomy process that allows live stone crabs to regenerate harvested claws.
Requirements & Qualifications Certification:
Must hold a valid HACCP training certification per 21 CFR 123.6 .
Permitting:
Ability to maintain and operate under a current food permit .
Regulatory Knowledge:
Deep understanding of seafood HACCP rules, state seafood quality standards, and FWC guidelines.
Experience:
Hands-on experience in seafood processing, dockside unloading, or vessel preparation/cooking operations.
