Job Description

Gibroni's Pizza — voted Best Pizza in San Clemente — is hiring a Kitchen Manager to run our kitchen and grow our catering. This is the top back-of-house seat and a professional, systems-driven role: you own quality, food cost, labor, and the crew, and you bring the organization, the numbers, and the follow-through that keep it all running — while helping us scale catering from 200+ guest weddings to lunch and corporate. What you'll own: daily pace and quality on Detroit-style dough; scheduling to labor targets and overtime control; food cost, ordering, counts and par levels; weekly reporting; food safety and on-time meal/rest breaks; keeping recipe guides, build sheets and SOPs current; coaching the line; and supporting our catering lead end to end. What we're looking for: 3+ years managing or running a kitchen with a record of controlling cost; extremely organized and systems-driven; strong computer skills (scheduling software, spreadsheets, reporting, POS); clear, professional written and verbal communication; calm and no-drama under a rush. Bakery/pizza/dough and catering/off-premise experience preferred; a culinary degree is a plus. ServSafe Manager (or within 60 days — we cover it) and CA Food Handler. Bilingual English/Spanish strongly preferred. Authorized to work in the U.S. Compensation & benefits: $28-33/hour DOE, or a salaried package considered for the right experience. This is a management role and does not participate in the tip pool. California paid sick leave; employee meal discounts; a 30/60/90-day growth path to a salaried role with paid vacation.
