Job Description
About Pop's Pop's Chesapeake Smoke Shack is a new, casual waterfront restaurant located at Georgetown Yacht Haven. Our menu centers around pit-cooked chicken, Chesapeake seafood, oysters, soft serve and simple seasonal drinks. Pop's is not a traditional full-service restaurant. Our compact kitchen operates primarily from a food truck, with additional outdoor cooking over our grill and pit. Guests order at the window and enjoy their food in our indoor and outdoor dining areas overlooking the marina. The Position We are looking for a hands-on Kitchen & Operations Manager to help us open Pop's and lead its day-to-day operation. This person will take ownership of our compact kitchen, including prep, ordering, inventory, food safety, staff leadership and ensuring smooth, consistent service. Beyond the kitchen, the Kitchen & Operations Manager will help oversee Pop's as a whole. This includes coordinating with our small indoor bar team, monitoring the indoor and outdoor dining areas, supporting staff during busy services and making sure the entire property remains clean, organized and welcoming. This is an active, hands-on position for someone who enjoys being involved in every part of a small operation. You won't be managing multiple restaurant departments or spending your day in an office. You'll lead the kitchen, cook alongside the team and serve as the on-site leader who keeps the entire operation running smoothly. Our menu and culinary direction are being developed by Chef Paul Edward. The Kitchen & Operations Manager will work closely with Paul and the owners to turn that vision into an organized, efficient and consistently executed operation. Responsibilities Help prepare Pop's for opening and establish practical kitchen systems Lead daily food preparation, cooking and service Operate and oversee the food-truck kitchen, grill and outdoor pit Maintain food quality, consistency and presentation Order food and supplies and maintain appropriate inventory levels Monitor food cost, waste, portioning and product usage Build prep lists and ensure the kitchen is ready for each service Train, schedule and supervise employees Coordinate the flow of orders between the kitchen, pickup window and bar Maintain excellent food-safety, sanitation and cleanliness standards Ensure equipment and cooking areas are properly opened, maintained and closed Support the bar and dining-area teams during busy periods Monitor the overall guest experience and address issues as they arise Keep the indoor space, outdoor dining area and property organized and welcoming Communicate clearly with the owners about staffing, inventory, maintenance and operational needs Serve as the primary on-site leader when the owners are not present Who We're Looking For Restaurant kitchen leadership or strong lead-cook experience Comfortable working in a food truck, outdoor kitchen or similarly compact environment Confident cooking over a grill or live fire, or excited to learn Organized and able to manage prep, ordering, inventory and staff Willing to cook, clean, solve problems and step into any part of the operation Calm and capable during busy services Dependable, communicative and able to work independently Comfortable working outdoors and in changing weather ServSafe Manager certification preferred or willingness to obtain it Pop's is a new business, so this is a great opportunity for someone who wants to help shape an operation from the beginning. The right person will have considerable responsibility, work closely with experienced restaurant owners and have room to grow as Pop's develops.
