You will participate in selecting, ordering varietal oysters. Help to develop dressed oysters and other raw bar specials along side the chef team. The position is for someone with a strong knowledge of oysters, shucking, and working with guests to provide awesome hospitality. We are not just looking for someone who can open oysters. They will have to be well rounded and have proper shucking technique. Your responsibilities will include helping train and teach the other shuckers, and the FOH team. keeping shellfish tags organized, and maintain proper storage of all live shellfish.
