Our Family Entertainment Centers (FECs) offer activities like bowling, laser tag, sports simulators, go-karting, arcades and more along with a craft-menu restaurant and full service bar. We are a fast-growing company with continued expansion plans and are looking for a Culinary Operations Manager to oversee the restaurant portion of multiple FEC locations currently open or planned to open in the near future. This role will need to perform the following responsibilities: Responsibilities Ensure that each park location delivers value and excellence to the guest at all times. Implement and maintain inventory controls over all parks and help investigate findings around inventory management using Actual vs. Theoretical reports. Report to the Chief Operating Officer or Executive Manager specified at time of hire. Conduct weekly staff meetings with the Kitchen Managers of each park. Act as a liaison between corporate headquarters and the parks by making regular visits and interacting with management as required by the business or set by Surge Management. This is a high travel position. Conduct food portion, quality, waste portions and safety evaluations of each park through frequent in-person visits. Ensure crew is trained properly and following kitchen procedures as designed. Promote strict adherence to the Health and Safety Policy and Food Safety Policy Help communicate all business updates and items from corporate management to the parks and vice-versa. Responsible for all Kitchen (BOH) operational practices making sure that each park runs smoothly and meets projected revenue, cost and sales estimates. Coordinate, report and make recommendations to senior management in order to grow market share, improve customer experience and drive growth. Review online reviews with each park Chef for positive feedback as well as to identify areas of growth. Conduct quarterly 1-on-1 reviews with each park Chef as well as help determine bonuses and set criteria for future bonus eligibility, working with Surge Management. Cultivate and grow a strong team of committed kitchen managers that will maintain profit margins and implement business plans. Coordinate with any Trainer positions to help develop, train and document all Back of House (BOH) process requirements for all park managers. If a park is without a Chef, fill the roll until a Chef is hired and trained. Work with other corporate team members to help lead the efforts for staffing and training of all new park roles. Help assist with all new park openings as directed by Surge Management. Ensure that all food and labor costs are executed profitably and in compliance to standardized business practices. Apply innovative approaches and techniques to keep updated with local competition. Monitor competitive pricing, specials and other criteria. Develop new menu items, drinks and dish specifications. Train and communicate new items with each park’s team. Evaluate menu pricing for proper profit margins Conduct vendor pricing analysis for proper purchasing decisions. Qualifications Proven experience in inventory management and food preparation Expert experience using R365 for inventory management Strong skills in food service and kitchen management Expertise in catering and restaurant management Leadership abilities with team management and supervisory experience Knowledge of banquet operations and fine dining standards Familiarity with dietary department practices and food production techniques
