Description The Director of Kitchen and Logistics is the heartbeat of our kitchen operations. This person will oversee the entire ice cream production process—from recipe development to final batch quality. This position reports to the Owner and is responsible for executing Two Roosters’ mission to explore how the joy of ice cream makes a good day great and a bad day better. RESPONSIBILITIES
This role is responsible for overseeing the entire ice cream production process, ensuring that all Two Roosters locations are consistently stocked and never run out of flavors. This role includes managing day-to-day kitchen operations, developing and executing special flavors and seasonal menus, and leading the production team to maintain quality, efficiency, and creativity.
Core Production:
Track ingredients and supply inventory; place and manage orders as needed. Create and manage the daily production schedule to ensure workload is reasonable for an 8-hour shift. Collaborate with leadership on flavor development, guest feedback, and shop inventory updates. Execute ice cream and menu recipes with attention to consistency and excellence. Actively produce and spin ice cream alongside the kitchen team. Adjust and document new recipes, production processes, and systems for improved efficiency. Track monthly production metrics, including total tubs produced. Maintain accurate ingredient, supply, and finished product inventory levels. Set and maintain par levels for finished ice cream, baked goods, and mix-ins.
Menu & Flavor Development:
Develop and test new flavors and seasonal offerings. Plan monthly themes and flavor lineups. Lead annual flavor planning meetings. Prepare ingredient and allergen lists for each month’s menu. Introduce new and exciting products that align with brand values and creativity.
Delivery & Logistics:
Track online specialty orders; ensure accurate and timely delivery to store locations. Prepare and manage daily delivery schedules to maintain adequate product stock levels across all locations
Quality Assurance, Cost Control & Growth:
Collaborate with the Owner to set and enforce product quality and consistency standards. Lead regular review meetings with the kitchen team to evaluate quality, efficiency, and consistency. Work with the Owner to establish costing protocols, including tracking ingredient and labor costs. Maintain high standards for ice cream flavor, texture, and overall product integrity. Kitchen Organization & Maintenance Develop and maintain an organized system for all cold, frozen, dry, and cleaning supplies. Take weekly inventory of finished goods and monthly inventory of all kitchen ingredients, paper goods, and finished goods. Maintain a cleaning and maintenance schedule for all equipment (ice cream machines, ovens, walk-ins, etc.). Troubleshoot minor equipment issues and communicate with the Owner for major repairs. Ensure sanitation standards and manufacturing best practices are followed at all times. Research & Development Identify ways to improve existing flavors through better quality, production efficiency, or cost savings. Propose new flavor ideas based on seasonality, creativity, ingredient accessibility, scalability, and cost. Lead the production and delivery of exclusive monthly flavors for the Secret Pint Club (SPC). Leadership & Team Management Serve as a key member of the company’s leadership team. Interview, hire, and train all kitchen team members. Manage labor cost budgets and team scheduling. Lead the kitchen team with positivity, clarity, and a standard of excellence. Provide direct, constructive feedback along with consistent encouragement and recognition. Foster open communication, welcoming questions, concerns, and new ideas. Regularly evaluate and support team member growth and performance. Additional Responsibilities Coordinate with the marketing team to ensure timely product availability for photoshoots. Oversee wholesale tub contracts, including invoicing and delivery coordination. Finalize and manage Two Roosters ice cream making classes and events hosted at the Hatchery.
QUALIFICATIONS
Minimum 5 years of experience in commercial pastry, ice cream, or culinary arts production (experience in frozen dessert manufacturing a big plus but not required) Must have a love of pastry/dessert/small business Strong leadership skills and experience managing a team in a kitchen or food production setting Creative mindset with a passion for crafting unique, memorable flavors Exceptional attention to detail and organizational skills Familiarity with kitchen sanitation and safety standards (ServSafe certification a plus) Ability to lift 50 lbs, stand for extended periods, and work in a fast-paced, physically demanding environment
COMPENSATION
This role is full time with $70,000 annual salary, in addition to a bonus program 15 days accrued PTO per year, in addition to 5 days of Two Roosters holidays (Christmas Eve, Christmas Day, Thanksgiving Day, Black Friday, Easter Sunday). We cover 50% of our group medical, dental, and vision insurance plan premiums for employees that work more than 30 hours per week as a 30-day average. New employees become eligible for coverage the first day of the month following completion of the 30-day waiting period. A spouse and children may be insured on company plan at employee’s expense. 401k with employer match. We match 100% of the first 3% of the employee’s contribution, plus 50% of the next 2%. Employees are eligible for 401k participation when they have worked at Two Roosters for 1,000 hours. Every five years (or 10,000 hours) of continuous service, full-time employees are eligible to take a paid, one-month sabbatical Salary $70,000 – $85,000 per year
