Job Description The Campus Dining Dietitian/Nutrition AssociateManager is the Subject Matter Expert for everything health,wellness and nutrition-related and is responsible for leading thelaunch, activation, maintenance, and continuous improvement of thehealth and wellness platform for Sam Houston Hospitality.
The scopeof the role will include responsibilities in three key focus areas:1. Campus Programming, Partnerships, and Education 2. Food andSafety Oversight and 3. Nutrition Consultations. The Campus DiningDietitian will use collaborative efforts in partnership with theculinary team, marketing team, leadership team, clients, and campusorganizations to enhance student experiences, strengthen campuspartnerships and build community relations through health andwellness programs and events. Job Responsibilities CampusProgramming, Partnerships, and Education Supports health and wellness platforms and implementation ofprograms such as tabling events, food samplings, cooking demos,lunch and learns, health fairs, guest speaker events and otheron-campus programming. Works with the Marketing Manager to engage the studentpopulation through social media and pop-up events and support mealplan sales by assisting students with choosing plans that work fortheir personal needs. Build relationships with clients, organization department headsand subgroups/community groups to align SH Hospitality with overallcampus wellness initiatives. Supports peer-to-peer programming and student interns asneeded. Occasional travel to support our visiting dietitian programmingas needed. Food and Safety Oversight Oversees compliance for the United States Food and DrugAdministration menu labeling laws as it relates to recipe and menuboard signage in on-campus residential and proprietary retaillocations, convenience locations, concessions, and catering (printand digital menus). Partners with the culinary team in supporting menu planning anddevelopment for multiple locations including residential, retail,and catering. This includes oversight of ingredient and allergentransparency Leads the culinary team in understanding special dietary needsincluding dietary restrictions related to food allergies orintolerances, and lifestyle diets due to personal preferences orreligious reasons. Nutrition Consultations Conducts one-on-one and/or group nutrition consultations forstudents, faculty/staff, and employees. Applies Medical Nutrition Therapy and follows the NutritionCare Process for charting during consultations. Provideseducational materials by accredited organizations such as theAcademy of Nutrition and Dietetics, American Heart Association,etc. Follows Health Insurance Portability and Accountability Act(HIPPA) and Family Educational Rights and Privacy Act (FERPA)guidelines throughout the nutrition consultation process. Maintains registration through the Commission on DieteticRegistration and Licensure through the Texas Department ofLicensing and Regulation. Submits status annually.

Due to thenature of the business, job duties may change or new ones may beassigned without formal notice. Qualifications Bachelor?s or Master’s degree in nutrition, dietetics, or arelated field. Registered Dietitian Nutritionist credential with theCommission of Dietetic Registration and Licensed Dietitian statusin Texas. RDN-eligible candidates may be considered. Food safety knowledge with ServSafe certification and foodallergy knowledge with AllerTrain certification; must be obtainedwithin 6 weeks of hire date. At least one (1) year experience in K12 or higher educationfood service preferred. Knowledge working with PC applications such as Word, Excel,PowerPoint, Outlook (previous experience with food productionsystems, nutrition analysis software, electronic medical recording,and social media platforms preferred). Strong communication skills (oral and written); can effectivelycommunicate with clients, customers, and support staff. The ability to establish and maintain effective workingrelations and communicate with a wide range of people and behaviorstyles. Solid strategic, analytical, and decision-making skills. A self-starter, confident in abilities, self-motivated,adaptable, and able to work effectively with littlesupervision. A strong value system, unquestioned integrity, and goodlistening skills.
