In addition, the Certified Dietary Manager will supervise activities of department staff to ensure quality food services. Essential Functions Helps maintain all kitchen operations and management training to ensure consistent product. Outlines sanitation and maintenance schedules to keep up all equipment and working areas. Plan menus, diets or guide individuals or families in food selection, preparation, or menu planning, based upon nutritional needs and established guidelines. Conduct nutritional assessments of individuals, including obtaining and evaluating individuals’ dietary histories, to plan nutritional programs. Constantly monitors training at every level to ensure complete understanding of job duties and responsibilities. Responsible for menu planning of therapeutic diets based on indicated physiological and psychological needs of residents. Guides and monitors implementation of residents nutritional care plans. Supervises all aspects of food service to the Manor and Villa. Confers with registered Dietitian and implements recommendations for maintenance of all standards for quality food service and nutritional care. Maintain sanitation standards for all aspects of food service operation. Adhere to The Estates at Carpenters’ policies and procedures, including those covering privacy and security in compliance with HIPAA regulations, and codes of conduct. Maintain confidentiality and respects resident’s privacy at all times in accordance with HIPAA regulations.
