ESSENTIAL JOB FUNCTIONS

• Plan, develop,organize, implement, evaluate, and direct the Dietary Department and itsprograms and activities.
• Coordinate dietary services and activitieswith other related departments (i.e., Nursing, Housekeeping, SocialServices, etc.).
• Inspect food storage rooms, utility/janitorialclosets, etc., for upkeep and supply control.
• Review and develop aplan of correction for dietary service deficiencies noted during surveyinspections.
• Assist in planning the dietary services portion of theresident’s discharge plan.
• Participate in facility surveys(inspections) made by authorized government agencies.
• Interviewresidents or family members, as necessary, to obtain diet history.
• Participate in maintaining records of the resident’s food likes anddislikes.
• Assist in developing methods for determining quality andquantity of food served.
• Assist in planning regular and special dietmenus as prescribed by the attending physician.
• Assist in developingdiet plans for individual residents.
• Review therapeutic and regulardiet plans and menus to assure they are in compliance with thephysician’s orders.
• Meet with administration, medical and nursingstaff, & other departments in planning food service programs andactivities.
• Ensure that dietary service work areas are maintained in aclean and sanitary manner.
• Ensure that all food storage rooms,preparation areas, etc., are maintained in a clean, safe, and sanitarymanner.
• Recommend to the Dietitian and/or Administrator the equipmentand supply needs of the department.
• Place orders for equipment andsupplies as necessary or as may be required.
• Ensure that stock levelsof staple/non-staple food, supplies, equipment, etc., are maintained atadequate levels at all times.
• Assist in interviewing food supplyvendors, as may be required.
• Assist in the purchasing of food servicesupplies, equipment, etc., as required.
• Develop a written dietary planof care that identifies the dietary problems/needs of the resident andgoals to be accomplished.
• Develop and maintain a good rapport withothers involved with the care plan to ensure that a team effort isachieved.
