Director of Culinary Operations, Director ofFood & Beverage, Food & Beverage Manager(s)

GENERAL SUMMARY

Bartenders report to the Food & Beverage Manager(s) and the Food & Beverage Director. Works in partnership with other Club team members to anticipate and meet the needs and desires of the Members. Ensures that all bar operations are meeting the Memberships’ expectations and the daily operations are consistent with Club Pelican Bay’s standards. Delivers consistently high dining service standards expected in a private club environment.

ESSENTIAL DUTIES AND RESPONSIBILITIES

Inspects the bar prior to opening to ensure that adequate supplies are available. Requests additional supplies as necessary and stocks the bar. Follows set-up procedures. Prepares garnishes, fruits mixes and pre-mixed drinks prior to opening bar. Greets Members and guests. Mixes, prepares and serves drinks to Members and guests and mixes and prepares drinks ordered by food and beverage servers according to approved standard recipes. Collects checks and payments for drinks served. Reports complaints to a manager as they occur. Maintains and cleans bar area and equipment. Maintains records of liquors, beers and wine to ensure bar stock is maintained at all times. Knowledgeable in all menus, specials, wine list, and wine by the glass, cordials and desserts. Cleans and locks the bar area according to prescribed closing procedures. Ensures that all food items are correctly stored, labeled, dated and rotated to prevent any health or safety hazards from occurring, and takes precautions against possible spoilage. Attends staff meetings including pre-shift (line-up) sessions and training as required. Carefully follows all laws and Club policies and procedures regarding alcoholic beverage service and informs manager if continued service to a Member or guest is in question. Serves drinks to Members and guests seated at lounge tables in the absence of a beverage server. Continually practices beverage and revenue control procedures. Completes other appropriate work assignments as requested by manager.

ADDITIONAL DUTIES AND RESPONSIBILITIES

Must be able to work a flexible schedule including evenings, weekends, and holidays Ensures safety measures are in place and company safety program is followed Perform effectively in either an indoor or outdoor setting. Skilled at slowing and refusing alcoholic beverage service when necessary. Complies with basic safety and sanitation requirements. Maintain effective employee and Member relations. Excellent verbal communication. Must be able to work large or small events with minimal supervision and in a team environment.

EDUCATION AND EXPERIENCE

High school diploma or equivalent, required. One year of related experience and/or training, preferably at a private Club, resort or hotel, required. Basic knowledge of Club’s POS system or comparable POS system, preferred. Well-informed on wine & spirits, preferred.

WORKING CONDITIONS AND PHYSICAL REQUIREMENTS

The physical demands described here are representative of those that must be met by an employee to successfully perform the essential duties and responsibilities of this position. The employee will be required to be Member facing at all times. Be able to communicate and understand the predominant language(s) of our Members. The employee is regularly required to stand and/or sit for long hours. Must be able to talk and hear in person and by telephone. Must use hands and fingers to operate, handle, or feel office equipment. Must reach with hands and arms. May work outdoors and be exposed to wet and/or hot conditions. Ability to perform first aid and CPR while utilizing the emergency equipment. Move or lift objects up to 30 pounds. Must be able to climb, crawl, reach, stoop, kneel, crouch, crawl, push or pull. Communication, to include: reading, hearing, and talking with employees and Members. Must have close, distance, peripheral, and color vision along with the ability to adjust focus.
