Position Summary The Head of Bars will lead the overall strategy, execution, and day-to-day operations of the bar and lounge program at Amazónico Miami. This individual will oversee all aspects of beverage service, team leadership, bar operations, menu development, training, and compliance to ensure alignment with Amazónico’s world-class standards. This is a hands-on leadership role requiring exceptional operational knowledge, creative vision, and team management capabilities. Amazonico Responsibilities Support the smooth operation of the restaurant and lounge, ensuring all guests receive exceptional service, care, and product knowledge in line with Amazónico standards. Act as a collaborative team player and demonstrate flexibility to support overall efficiency and profitability. Possess in-depth knowledge of the full food, dessert, and beverage menus. Respond promptly and professionally to guest requests and needs. Be present and hands-on during service to lead by example. Maintain the highest levels of cleanliness, hygiene, and safety in accordance with company policies. Departmental Responsibilities Ensure all beverages are prepared and served with precision, speed, and product expertise. Ensure all alcoholic beverages are served responsibly and in compliance with relevant regulations. Consistently deliver outstanding guest service, maintaining a strong service focus and procedural discipline. Carry out any additional tasks as required, including assisting other departments or company venues when needed. Maintain and complete daily/weekly cleaning checklists and uphold operational standards. Role Responsibilities Oversee the full operation and performance of the bar and beverage program at Amazónico Miami. Collaborate with the Global Head of Bars to develop innovative cocktail menus, source unique glassware, and enhance the overall guest beverage experience. Manage ordering processes and maintain correct par levels for all beverages, fruit, dry goods, and bar supplies. Ensure bar equipment, OS&E, and glassware inventories are regularly tracked and updated. Maintain accurate beverage recipe files and training documentation. Ensure proper setup of all platforms (STO, Micros) and accuracy of recipes and stock usage. Oversee mise en place, bar setup, and end-of-shift breakdown procedures. Guarantee the cleanliness and readiness of all glassware and equipment used for service. Uphold and enforce standard operating procedures and high-performance work ethics among the bar team. Prepare all beverages (hot and cold) to Amazónico standards. Handle guest inquiries and complaints with professionalism and efficiency. Conduct weekly bar inventories and ensure timely requisitions and reporting. Lead recruitment, onboarding, training, and ongoing development of the bar team, providing regular feedback and coaching. Manage weekly staff rotas to ensure optimal coverage and service consistency. Ensure accuracy in cash handling and compliance with banking protocols. Continuously review and evolve the beverage offering to reflect trends and brand identity. Complete and communicate all required reports in a timely and efficient manner. Monitor departmental KPIs, including wage budgets, and implement strategies to achieve performance targets. Represent Amazónico Miami at external events, acting as a brand ambassador. Qualifications Minimum 5 years’ experience in a senior bar leadership role within luxury hospitality or high-volume fine dining. Strong background in cocktail development, menu design, and bar operations. Proven team leadership skills with experience in recruitment, training, and staff development. Exceptional knowledge of spirits, wines, mixology trends, and beverage service standards. Familiarity with systems such as Micros, STO, and inventory management platforms. Detail-oriented, organized, and able to manage multiple priorities under pressure. Fluent in English; Spanish is a plus. Must be flexible to work evenings, weekends, and holidays as needed.
