General Manager / Ownership Position Overview Spruce on Blackbridge is seeking an experienced, visionary Head Bartender to lead the bar program across three distinct service areas: a high-volume main bar, an upstairs cocktail bar, and an outdoor bar. The ideal candidate has strong leadership experience, deep cocktail and craft beer knowledge, and a passion for building efficient, high-performing systems. This role includes developing bar menus, hiring and training bar staff, managing inventory and ordering, and creating all standard operating procedures (SOPs) necessary for consistent and exceptional execution. Key Responsibilities — Menu and Program Development Design and maintain seasonal, profitable cocktail menus that align with Spruce’s brand and clientele Curate beer, wine, cider, and spirit selections across all bars Collaborate with the Chef and General Manager to ensure food and beverage synergy Leadership and Staff Management Recruit, hire, and train bartenders and barbacks for all bar locations Set and manage bar schedules for appropriate coverage and efficiency Provide ongoing mentorship, training, and performance management Inventory and Ordering Maintain accurate inventory of liquor, beer, wine, mixers, and bar supplies Establish par levels and ordering systems that support both volume and quality Manage cost control through efficient ordering, prep, and waste reduction SOPs and Systems Create and enforce standard operating procedures for: Bar setup and breakdown Cocktail builds and batching Cleaning and sanitation Keg and draft line maintenance Service expectations and bar guest experience Operational Leadership Coordinate closely with FOH and BOH to ensure smooth daily operations Support special events, seasonal rollouts, and private functions Uphold health and safety compliance across all bar areas Qualifications 3-5+ years of bartending experience, with at least 1-2 years in a leadership role Deep knowledge of spirits, cocktails, beer, and wine Proven staff management and operational leadership experience Excellent attention to detail, cleanliness, and consistency High-volume or multi-bar experience preferred Strong communication, time management, and organizational skills Compensation Base Salary + Plus Tips (if working active bar shifts) Optional Performance Bonus Structure tied to sales, labor, or inventory benchmarks Thank you for your interest.
