$95000 per year – $95000 per year At Great Wolf, theAssistant Director of Food & Beverage , under the guidance of theDirector of Food & Beverage, manages and oversees all aspects ofthe organization’s food and beverage planning, presentation andservice, with duties particularly focused towards special eventplanning/implementation, managing departmental costs, overseeingall aspects of F&B training and adherence to quality and safetystandards. The Assistant Director leads the operations of thedepartment in conjunction with and in the absence of the Director.

Essential Duties & Responsibilities:
Assists the Director inoverseeing the daily functions of administration and planning ofthe Food and Beverage Department to meet the needs of the operationin achieving monthly KPI goals. Helps team to achieve operationalobjectives by contributing information and recommendations tostrategic plans and reviews; preparing and completing action plans;implementing production, productivity, quality, and customerservice standards; resolving problems; completing audits;identifying trends; determining system improvements; implementingchange. Actively participates and follows up in the proficientrecruiting, hiring, orientating & training, assigning, scheduling,coaching and counseling of Pack Members; communicating jobexpectations; planning, monitoring, giving feedback, and reviewingjob contributions;; enforcing policies and procedures consistentwith the Great Wolf Lodge Handbook. Assigns, audits and ensurescompliance of Pack Member participation training courses in GreatWolf University. Collaborates with F&B leadership on Packdevelopment, training and succession planning. Leads frontlinestaff in anticipating and attending to guests needs to ensuremaximum satisfaction Partners with F&B leadership in directingthe preparation, presentation and timeliness of all foods andbeverages in all venues of the Lodge; Ensure all items are preparedper recipe guidelines meeting flavor, quality, speed and servicestandards. Collaborates with the Executive Chef and Purchasing Teamto ensure storeroom, cooler and freezer organization to maintaindesignated par levels and adherence to all health coderequirements; First-in/First-out protocols. Assists Director andChef with controlling cost of goods sold through regular review ofportion control and preparation quantities produced by frontlinepack; Extends to activities designed to minimize waste. Ensure allF&B areas strictly and continuously adhere to all local andnational standards of food handling, cleanliness, sanitation,organization and maintenance coinciding with direct oversight ofthe daily/ weekly/monthly cleaning schedule and daily execution ofGreat Wolf internal safety audits. Works with F&B Leaders andHR to ensure timely, accurate execution of scheduling and payrollactivities. Monitors equipment operation, perform preventativemaintenance, troubleshoot breakdowns, maintain supplies, and callfor repairs as necessary through designated channels. Participatein weekly/monthly inventory procedures to ensure budgetedcontrollable costs are not exceeded and appropriate pars aremaintained. Conducts department pre-shift meetings and serviceaudits at designated timelines; corrects service components asneeded to ensure guest satisfaction scores and company standardsare achieved. Assists Director with oversight and achievement ofgoals in Culinary, Stewarding and Purchasing functions and budgets.
Supports Purchasing & Stewarding team activities related toorganizing and maintaining par levels of all kitchen-relatedchemicals and cleaning components; Ensures all F&B team iskeenly trained on SDS forms, safety and compliance. Ensures lodgecomplies and meets all minimum score goals for scheduled andnon-scheduled safety inspections. Ensures all operations conform toregulations of the local health and alcohol regulatory commissions.
Basic Qualifications & Skills:
High School diploma or equivalentexperience Minimum of 2-3 years management experience in food &beverage Experienced with procurement and inventory control system,process and procedures Must be flexible regarding scheduling basedon business demands, including nights, weekends and Holidays asneeded. Excellent writing and verbal communication skillsProficient in P&L management and controls Strong analyticalskills – Understand and react appropriately to key businessindicators Demonstrated experience leading teams to achieve/exceedgoals. Strong attention to detail and time management skills.
Desktop and similar hospitality software (Familiarity withMicrosoft Office Suite, payroll systems, POS). Successfulcompletion of criminal background check and drug screen. Highlyproficient with food safety and sanitation practices, rules andregulations Experience with guest satisfaction and employeeengagement programs and tools
Desired Qualifications & Traits:
Bachelor’s degree in hospitality, business, or related fieldExperience with overall oversight and coordination of trainingprograms for F&B on an entire propert Manager-levelcertification from nationally accredited food safety trainingprogram Manager-level certification from nationally accreditedalcohol awareness & safety training program Effective communicationand ability to resolve conflict; Proven teamwork Training and/orexperience with hands-on kitchen and bar equipment maintenancePrior experience developing and implementing plans to ensure a safework environment in compliance with appropriate regulations (i.e. -Ergonomics, Emergency Response, Injury and Illness Prevention, andHazard Communication Plans)
