Job Description

Meat Cutter/Butcher Blue Ridge Meats / Providence Farmstead 230 Ponderosa Road, Rabun Gap, GA 29691 Blue Ridge Meats Meat Cutter / Butcher A meat cutter, also known as a butcher, is responsible for preparing meat for packaging, which includes cutting, trimming, and weighing different cuts of meat. They also handle tasks like packaging, labeling, grinding, and quality control.

Primary Responsibilities:
Cutting and Trimming:

Breaking down wholesale cuts of meat into smaller, ready-to-package portions using knives, saws, and other tools. This also includes breaking down beef and pork from the whole animal carcass.

Weighing and Portioning:

Accurately weighing and portioning meat cuts for packaging, often following specific recipes or customer requests.

Packaging and Labeling:

Preparing meat for sale by packaging it appropriately and labeling it with necessary information like cut, species, and safe handling information.

Cleaning and Sanitation:

Maintaining a clean and sanitary work area and equipment, following safety protocols, and ensuring proper refrigeration procedures.

Quality Control:

Inspecting meat for quality and identifying any defects or blemishes.

Equipment Operation:

Safely operating and maintaining meat processing equipment like saws, grinders, and slicers.

Flexibility:

Ability to work in other areas of the meat processing plant to help the entire plant be successful. Including but not limited to cooler and freezer organization and sanitation, packaging meat products, hamburger patty production, preparing retail cuts, general sanitation duties, facility maintenance and any other assigned tasks.

00 per hour based on experience and skill Average 38-40 hours per week

Required Skills:

Knowledge of animal anatomy and break down procedures for whole animal carcass. Ability to push, pull, and lift up to 50 pounds. Ability to complete repetitive motions using a knife all while standing for an eight hour shift. (breaks are provided) Understanding of HACCP principles and regulations. Excellent communication and interpersonal skills. Ability to work in a fast-paced, hot or cold environment. Strong problem-solving and decision-making abilities. Knowledge of safety protocols and regulations. Experience with record keeping and documentation. Physical ability to perform tasks on the cut room floor.

Qualifications:

High school diploma or equivalent. Previous experience in a meat cutting or meat processing environment, required. Relevant certifications or training in meat cutting, carcass breakdown, or food safety.
