Role:
We are hiring an experienced Butcher II to join our team. This mid-senior level role supports whole animal breakdowns, fresh case setup, and the daily execution of our butchery program. The ideal candidate is precise, self-motivated, and committed to furthering their skills in craft butchery. This position works closely with our Head Butcher and helps guide junior team members.
Key Responsibilities:
Assist in whole animal breakdowns of beef, pork, and lamb with accuracy and efficiency
Fabricate primal and subprimal cuts for fresh case, special orders, and restaurant service
Execute sausage-making, marinated items, and other value-added products
Support training and mentoring of Butcher I and Apprentice-level staff
Maintain strict food safety, sanitation, and equipment care standards
Track yield and minimize trim and waste
Participate in customer service as needed at the retail counter
Qualifications:
Minimum 4 years of professional butchery experience, including whole animal breakdown
Advanced knife skills, precision, and speed
Familiarity with meat yield tracking, inventory, and fresh case presentation
Strong communication and teamwork skills
Ability to lift 60+ lbs and work on your feet for extended periods
Interest in sourcing transparency, regional food systems, and sustainability
