You will be tasked with preparing sushi dishes in accordance with food health and safety regulations and restaurant standards. The sushi chef’s responsibilities include preparing traditional Japanese sushi rice, chopping, slicing, and filleting various kinds of fish, and placing orders for supplies as needed. You should also be able to customize customers’ orders according to preferences and food allergy considerations. To be successful as a sushi chef, you should ensure that all ingredients used in dishes are of the highest quality. Ultimately, an exceptional sushi chef should work well under pressure and maintain restaurant standards during busy periods.
Sushi Chef Responsibilities:
Create a rich sushi menu with various main ingredients and raw fish (for example, salmon, tuna, unagi) Prepare all types of sushi, including maki, nigiri and sashimi Select fresh fruits and vegetables to make high-quality dishes (like avocado, mango and carrots) Add additional flavors to sushi rolls with ginger, rice vinegar, wasabi and soy sauce, when appropriate Manage food prep activities, like boiling rice Coordinate with our wait staff to ensure proper cooking, considering special requests and food allergies Prepare appetizers, soups and salads that are close to the philosophy of Japanese cuisine Monitor food stock and place orders, as needed Recommend new, modern recipes, like sushi burgers Maintain hygiene principles in all cooking areas and clean your space at the end of the shift Qualifications High school diploma or GED. Associates degree in culinary arts or American Culinary Federation (ACF) certification is preferred. Proven experience working in upscale sushi restaurants. Valid food handler’s license. Sound knowledge of food safety regulations. The ability to work under pressure. The ability to stand for long periods of time. Excellent time-management skills. Exceptional customer service skills.
