Zak The Baker is a Miami-based artisanal bakery specializing in sourdough bread and traditional pastries. Our rapidly-growing company consists of a retail bakery and cafe, wholesale bakery and catering program. Zak The Baker serves dozens of regional businesses through its wholesale bakery including 17 regional Whole Foods Marketplace stores via our delivery fleet. Early mornings, weekends, full-time Overview We are looking for a Chef de Partie (Pastry Production Supervisor) to support daily operations and ensure the smooth execution of production within our pastry department. This supervisory role involves leading team members, upholding quality and food safety standards, coordinating tasks, and fostering a positive, collaborative work environment. Key Responsibilities Supervise daily pastry production to ensure consistency and quality. Provide hands-on training in shaping, proofing, mixing, baking, and all standard procedures. Organize and distribute production tasks in collaboration with the Sous Chef and Pastry Chef. Troubleshoot production issues per established protocols. Enforce company policies, pace, department processes and report non-compliance. Ensure adherence to food safety and sanitation standards. Oversee shift openings and closings for cleanliness and organization. Maintain effective communication with the team and leadership (e.g., shift reports, weekly debriefs). Collaborate on building a constructive, team-oriented production environment. Assist with inventory and ordering using established tools and procedures. Take on delegated responsibilities in the Pastry Chef’s absence, such as scheduling. Perform other tasks as assigned to support the department’s success. Work Conditions Physically demanding role requiring lifting (up to 50 lbs), long periods of standing, and working in hot/cold environments. Exposure to flour, use of ladders, sharp tools, and commercial kitchen equipment. Must maintain composure and efficiency in a fast-paced, high-volume setting. Requirements At least 1 year of artisan baking experience required. Experience with lamination preferred. Previous commercial kitchen experience (bakery) required. Open availability, including weekends. Ability to accept feedback and continuously improve. Supervisory experience is a plus but not required.
