Position Overview As Chef de Partie – Wok Station , you will own the preparation and execution of all wok-fired dishes, ensuring speed, consistency, and exceptional quality. You’ll work closely with the Executive and Sous Chefs to maintain mise en place, uphold recipe standards, and contribute creatively to menu evolution.
Key Responsibilities Wok Station Leadership Recipe Execution:
Prepare and cook wok-based dishes—stir-fries, sautés, rice and noodle specialties—adhering precisely to Amazónico recipes, portion sizes, and presentation guidelines.
Station Management:
Set up, organize, and restock your station each shift; maintain clear labeling, FIFO rotation, and ingredient freshness.
Quality Control:
Monitor taste, texture, and appearance; adjust seasonings and technique to guarantee guest satisfaction.
Speed & Timing:
Coordinate with expeditors and other stations to ensure timely delivery of dishes during peak service periods.
Sanitation & Safety Cleanliness:
Keep the wok station and surrounding areas sanitized and clutter-free at all times, following ServSafe and OSHA guidelines.
Equipment Care:
Operate and maintain high-heat burners, woks, and ventilation equipment safely; report any maintenance issues immediately.
Personal Hygiene:
Adhere to company grooming standards and wear proper kitchen attire (chef’s coat, non-slip shoes, hair restraint).
Teamwork & Culture Collaboration:
Mentor commis cooks and line cooks rotating through the wok station; share best practices and techniques.
Training & Development:
Participate in all kitchen training sessions, pre-service briefings, and menu tastings; contribute ideas for seasonal specials.
Cross-Training:
Be prepared to assist at other stations or support back-of-house duties as business needs dictate.
Qualifications & Skills Experience:
2-4 years of progressive wok-station or sauté experience in high-volume, fine-casual, or fine-dining kitchens.
Technical Proficiency:
Strong mastery of high-heat cooking techniques, wok handling, and Asian-inspired flavor profiles.
Certifications:
ServSafe food-safety certification preferred.

Excellent knife skills and ability to work quickly under pressure. Strong sense of timing, organization, and attention to detail. Collaborative mindset with clear, respectful communication.
